Today I am going to be sharing with you the meals which I have been consuming this week. It has been a strange week because I had Jess home on Monday as a result of a teacher training day. Then I have to feed her of course, at the weekend. I have also been struggling with an double ear infection which sucks and I have not had the motivation to cook.If only I could have the ear drops but I can’t due to been pregnant. This is why so many of the meals are the same as last week. Anyway on to the meals which I have been consuming this week.
Monday- Hunters Chicken and Wedges, this is a meal which I think I have been planning on making for the longest time. However, I really want to get around to having this. I am sure it is a meal which Jess will eat and to be honest it is one which I can stick in the slow cooker and forget about which is a bonus when I am solo parenting.
Tuesday- Pulled Pork and Jacket Potato, this is a meal which we had a few weeks ago however, I had a stomach bug. I swear I have had no luck recently. I decided to freeze this and then I am going to take this out and have it with some jacket potatoes because I still have plenty of potatoes left in the house.
Wednesday- Chicken Kiev and Salad, I love to make my own chicken kiev because it is something which is more tasty. You manage to get a lot more flavour than when you purchase them from the shops. I actually use an old Hello Fresh recipe which I will share at some stage. I am going to throw this with some salad which I have in an this is going to be a tasty meal.
Thursday- Fish and Jacket Potato, I purchased some fish which was reduced before Joe went away. I actually stuck in the freezer. For sure this is a meal which I am looking forward to. I seem to think that this is seasoned with garlic and chilli which I already love. Again I am going to be having this with jacket potatoes. These are something which I love at the moment.
Friday- Veg Chow Mein, this is still a meal which I have not got around to making yet. Hopefully this is something which I am going to be able to make this week. I only have not made it because I have not been feeling very well. I have nearly ordered a takeaway this week so I think this is something which I need to make as soon as possible.
Saturday- Chicken Brie and Leak Pie + Chips, this is a meal which I am looking forward to making for Jess. I know this is a meal which I love because the weather has been so cold and damp this week. So this is one which I am looking forward to because it is going to bring some warmth. I think this is a meal which I am looking forward to the most this week actually. I might make some of my own chips however, we do have some in the freezer which I may end up using up.
Sunday- Sausage and Cherry Tomato Ragu, this is a recipe which I found in an Asda magazine. This is one which I am looking forward for as well because I love to try new recipes. A pasta dish is always something which goes down a treat with Jess because it one of her favourite foods. I am sure there is going to be clean plates all around when it comes to this meal.
