Today I am going to be sharing with you the meals which we have been making this week. I think meal planning may get easier for us soon because we are getting used to the way life is at the moment. It is almost becoming normal. It is hard having to make a list to send Joe to the supermarket to get the bits we need and not be able to pick up whatever I want. Meal planning is helping us so much because we are not just purchasing random items on a whim. Anyway on to the meals which we have been consuming this week.
Monday- Three Bean Chilli and Rice. We decided that we fancied a veggie dish this week because otherwise the menu was going to be very meat heavy. Chilli is something which we love normally I do not think we have ever had a veggie version. So I am interested to see how this is going to work.
Tuesday-West African Style Check Peanut Stew. This is a meal which we have had a while ago now. It is almost like a curry rather than a stew. This is something which I saw on Charlotte Taylor’s Youtube Channel. I seem to remember she got it from a Tesco magazine. We loved this but it is going to be interesting to see how Jess finds this meal as she has not tried it.
Wednesday- Bacon Cheeseburger Meatballs Spaghetti and Sauce. This is a recipe which I think we will be making this week. I found it on Pinterest. It does look like it could be one of these meals which is a little bit fiddly so may be great for while we seem to have a lot of time on our hands during this lockdown period.
Thursday – Cheesey Mexican Stuffed Chicken. Chicken is something which we love in this house for sure this seemed like a good way to consume some. I think this is going to be served with some wedges and spaghetti. Mexican food is something which we all enjoy so this seems like one which is going to go down like a winner.
Friday- Donner Kebabs. this is something which we have made in the past and to be honest loved. I thought we would make some more instead of ordering from the takeaway. No doubt this is sensible with everything going on. I use a a slimming world recipe and am going to add a lot of salad into them. Fingers crossed this is something which Jess does love.
Saturday-Pulled Chicken Burgers, I think it was at the start of lockdown that we made these. Pork was not something which we could get hold of so we used chicken. To be honest I found them a lot lighter than using a when you would do a normal pulled pork burger. Fingers crossed we can get hold of some really nice soft rolls to be able to put them in.
Sunday- Lasagne, again this is something which we have not had in the longest time. I thought I would treat the family and make one of these. The weather is not supposed to be that great on Sunday. So this is going to be perfect. We have picked up a garlic bread which will be served with this there may be some salad on the side for me as well.
