Today I am going to be sharing with you the meals which we have been consuming this week. I usually share our meal plans weekly, however, I did not bother last week as I was just grabbing whatever was in the freezer because I basically had no energy to cook. Thank god Joe is back now it means he can take over the cooking again. I am sure this is something that he will be doing more and more as we head closer to the arrival of our second bundle of joy. I can not believe we only have 4 1/2 weeks till our due date now. Anyway, on to the meals which we have been consuming this week, there is a wide range of different meals. Some are slow cooker meals because we all know how busy we get when it comes up to the festive period.
Monday- Fajitas, this is such an easy meal and it is something which we love I have not had them for a while. I know this is something that Joe will not have had while he has been away. I think I might even add some spice because this is something that I can now tolerate. Instead of purchasing a kit we do actually do our own seasoning and this is something which I prefer and of course, this is a fraction of the price. We have all of the toppings including Salsa, Sour Cream and also Guacamole. This is going to be something which we will be adding to the meal plan again very soon I am sure.
Tuesday- Sweet and Sour Chicken, we have a jar of this in the back of the cupboard. I want to get this used up because it has been in there for a very long time. I do like to have emptier cupboards this time of year before we stock them up around the festive period. Sweet and sour chicken is not something which we have had for the longest time. I think I am going to be serving this with rice if we have some in.
Wednesday- Burritos, Mexican food is something which we love and burritos are something which I do not think that I have ever made before. Sadly we do not have anywhere close which does deliver Mexican food so we are going to have to make our own food. I am hoping this is a good meal because I would love to be able to make it a lot. Of course, I will report how we find this meal. Hopefully, this is one which I am going to be able to make myself rather than having to as Joe to do it. I am aiming to cook once or twice a week. I know this does not sound a lot but I have a lack of energy by 6 pm.
Thursday- Diet Cola Chicken, this is a meal which we have had previously and it is one which we really loved. It is a pinch of nom recipe for sure it is a bit of a fakeaway. We actually fancied a few treat meals this week because we have not had many recently. I think this is going to be one which we are going to serve with rice as well. Of course, this is going to be a lot cheaper than having a takeaway and with another little one on the way and Christmas, we wouldn’t mind saving a few pennies at the moment. More so when we know the meal we are going to be consuming is actually tasty.
Friday- Burger and Chips, this is a meal which I found on Pinterest and this is something which I fancied. Making our own burgers is something which we like to do we have made feta burgers and lamb ones in the past. I am sure if this is a meal that we enjoy and manage to master for sure we will be sharing this. The recipe we found claims it is to make the ultimate burger however, I am unsure how accurate this is going to be. I think we are going to use oven chips rather than making our own however, I might change my mind, of course, nothing is set in stone at the moment.
Saturday- Campfire Stew, yes this is another pinch of nom recipe which we make in the slow cooker. This is going to be perfect because it is a slow cooker meal and we are present exchanging with Joe’s side of the family. So we want a meal which we do nothing to when we get in a basically eat. Of course, we do not know what time we will be back and cooking no doubt is going to be one of the last things we want to do. This is a recipe that we have used a number of times and never had a problem with we always seem to come back to it at this time of year when the weather changes.
Sunday- Turkey Meatballs and Spaghetti, I am unsure where I found this recipe to be honest. It is another slow cooker meal because I think the plan is to put the tree up today. Usually, this would be a bit early for us however, we do not have lot of free time in December this year. Again it is going to be another meal which I can essentially forget about which is always a bonus when the tea is just ready for you.
