Sorry I have not been posting a lot recently. There has been a lot going on privately on top of homeschooling. As you may have seen on Instagram we sadly lost one of our bunnies as well. I think we had a week where nothing went right. I chose to take some time off because I was not in the right headspace but hopefully this has changed now. Anyway on to the meals which we are going to be consuming. Of course, this is the first week where Jess is back at school so I am going to be making meals that are quick. I have a feeling by the end of the week she is going to be very tired without a doubt.
Saturday- Diet Cola Chicken with Rice, this is a pinch of nom recipe which we have made a couple of times in the past. This is one which is like a fakeaway it is like something which we would order from a Chinese. I know this is a meal which we all like so there will be clean plates when it comes to this meal for sure.
Sunday- Baked Chimichanga, this again is another pinch of nom recipe. This is one which we have only made once in the past however, it is one which we all enjoyed for sure. Mexican food is something which we love and recently we have found there is a Mexican takeaway opening close to our house which we may have to try at some stage. This is almost an enchilada kind of meal I think this is going to be served on it’s own.
Monday- Mexican Street Corn Soup, with the weather set to change again to rain and storms. This meal seems to be a good one to add to the meal plan. I have picked up some crusty bread which we are going to have with this. We are still trying to do meat-free Monday. For sure this is one that works for this. I am sure this is one which the kids will enjoy as it should not be too spicy
Tuesday- Creamy Cajun Pasta, who does not want a pasta dish when they are trying to have an easy week. This is a meal that I know the kids will enjoy. Again with it been Cajun it is not going to be too spicy for them. Something I am sometimes worried about as Troy has his meals a day after us. Which means it only gets spicier. Fingers crossed this is a nice comforting meal for everyone.
Wednesday- Chicken Balti, curry is not something which we have had for a while. So I decided that it was going to be added to the meal plan. I actually now make my own from scratch for some reason I just find better spice wise for us than jars. This one is going to be served with rice and maybe some nan bread as we have some leftovers from last week.
Thursday- Leftovers. there should be enough Chicken Balti to have it again. I think we will be serving it with some more rice and nan bread. I enjoy curry enough to have it too meals in a row. If we do not have it on Thursday we could always swap the meal with Friday’s. I am trying to just do whatever, I need to for an easy life this week.
Friday- Popcorn Chicken and Pizza Loaded Fries. This is something that I have decided to do instead of ordering in or having a pizza for me and Jess. I am sure it is a meal which everyone will enjoy as well. I think I might even prep this meal during the day so that I do not have a ton to do when Jess gets home from school. No doubt by Friday I will be as tired as her with the school run back something which I have not been used to for months.
