Happy New Year it is now 2020 and the start of a brand new decade. This is the time of year where a lot of people have new goals they want to achieve within the year. For me this year I have decided to take off the pressure and not bother. I will have a newborn very soon which is one of the reasons I have taken the stress off. Anyway on to the meals which we have been consuming this week. January is a great time to start meal planning and save some extra pennies.
Monday- Out, Joe and I have some rare time to ourselves we even have the evening without Jess. I think we are going to either go for a meal our or order a takeaway. This all depends on what we have done during the day and also how much energy I have left. Energy is something I am struggling with currently.
Tuesday- Something in the freezer, it’s NYE of course not that I think I will see the new year in I will be fast asleep. We have so many left overs from Christmas that I think we might end up having almost a picky buffet tea. There may be elements from the freezer like left over onion rings. Making more space for batch cooking for the next time I have to solo parent.
Wednesday- Lasanga, usually we would have a new years day roast however, I can not be bothered this year. Instead we are going to make a lasanga which is super simple. It is one of my go too cosy foods to make and of course, once you have done it you just stick it in the oven. I am trying to rest as much as a I can because I am no39 weeks pregnant.
Thursday- Fish, Jacket Potatoes and Spaghetti. We have some fish in the freezer which could do with been used up alongside the jacket potatoes. I thought we would have this as a meal before they go to waste which is something which we don’t want. I also want to have some easy meals to start the new year with.
Friday- Burger, Chips and Beans. Again this is another meal which we have in the freezer. I made some Pork, Feta and Courgette burgers a while back. I thought I would get them out of the freezer and cook them for an easy fakeaway. For sure this is something which I am looking forward to.
Saturday- Spicy Turkey Tortillas, this is a slow cooker recipe. I may have to share it with you in the future if this is something which we love. We have decided that we are going to do a slow cooker meal because of the fact that we may be going to see Joe’s side of the family. I can not wait to try this meal.
Sunday- Peri Peri Chicken and Rice, we have some peri peri sauce in the cupboard. I want to get it used up because I know it has been in there for a least a year. This is the reason I want to get it used up because otherwise it could sit there for another long period of time which is something that we do not want.
