Today I am back sharing with you anther weekly meal plan. I did ask if you still wanted to see these while we are in lockdown. As I know it can be harder to get the ingredient for the recipes. However, the majority of you said yes because you may be meal planning more than you have in the past. Joe is now at home for the next two weeks at least he is still on call should he be needed. We are still trying to make some tasty meals despite the situation because I have decided it is a great time to try some new recipes. Anyway on to the meals which we have had this week.
Monday- Hunters Chicken and Wedges, this is something which we all love we have some bacon in the fridge which needs using. It was left over from last week and the BLT pasta. We actually use Katy’s recipe for this we have done it several times and highly recommend it. There was clean plates all round.
Tuesday- Campfire Stew, this is a pinch of nom recipes we had planned to have it a few weeks ago but decided against it and put the gammon in the freezer. I got it out and made a slow cooker full of campfire stew. Again there again clean plates. Even Jess enjoyed it and to be honest I put in a fair amount of hot sauce.
Wednesday- Campfire Stew, they was more than enough to have the rest for tea tonight. We just warmed it up saved cooking another meal. I think this will be one of the last times we have it till the weather cools down though. For sure it is one I would recommend trying if you haven’t already.
Thursday- Spicy Sausage Chilli, this is a recipe which came about because we had some sausages which where out of date this week. I decided to make a spicy sausage chilli and serve with rice. This is a meal which I really enjoyed to be honest. We had to make some changes compared to normal because we did not have the peppers I used more onions. To be honest this was well received by everyone.
Friday- Steak, Onion and Parsnip Pasties and Chips. This is a meal which we have decided to make because of getting some parsnip from the abel and cole box. I must admit that parsnips are not something which I would normal purchase but I am looking forward to cooking with them and hopefully having a tasty meal. I may even put some spaghetti hoops on the side for this meal as well to bulk it up.
Saturday- Indian Fried Rice, again this is another meal from a pinch of nom. I thought that we would make a fakeaway style meal and this is one which caught my attention. I do not think we have had a recipe which we have not liked at all from a pinch of nom. So I am looking forward to seeing how we find this meal. For sure it is one which I will be reporting back on.
Sunday-Homemade Pizza, we have decided to make some home made pizzas we have some bases and sauce in the cupboard. I thought it would be a fun activity and it is something which I know Jess likes doing as well so it is going to be a fun. Hopefully we will manage to get the whole family involved.
