Today I am going to be sharing with you our weekly meal plan like I do most weeks. I can not believe that we are now at the end of January. This month seems to have gone super quick I am unsure if this is due to having a newborn in the house or what. This week for some reason the tiredness has hit me like a ton of bricks. This has meant I have wanted quick easy meals because I do not want to be spending hours cooking. There is a lot of meals which have been made as a result of having ingredient leftover. Anyway on to the meals which we have been consuming this week.
Monday- West African Chicken Peanut Stew, this is a recipe which I actually saw on Charlotte Taylor’s meal plan. It sounded something different which is always a bonus in this house I am aiming to try one new recipe at least a week. This is one which I would say is more like a curry than a stew. It was great for this time of the year when the weather can’t make up its mind and you want something warm and hearty. For sure this is a recipe which I will be making again in the future.
Tuesday- Salmon with greens & Creme Fraiche with Jacket Potatoes. We had some creme fraiche leftover from a recipe which from last week’s meal plan. I decided that we were going to use it up we also had some salmon in the freezer. This was a simple dish however, it was actually very nice despite it been so simple.
Wednesday- Bacon and Sausage Carbonara, again this is a meal which is been made to use up ingredients from last week. We had some bacon leftover so we decided that it would be great to use it up in a meal which we love. This is one which I am looking forward to it is warming which is something we need in this cold snap. It is a twist on the carbonara which we had at the weekend which actually was very disappointing for sure. There is a chance that this will be served with garlic bread as well.
Thursday- Chicken, Brie and Leek Pie. We have some cheese leftover from Christmas well just after when I could eat nice cheese again. I have decided that I actually want to use this up now so I am making a meal which I love. I think it is actually my favourite type of pie and it is super simple and easy to make. We may have this with chips however, it may actually be served on its own.
Friday- Smokey Calzone, this is a meal which Joe actually choose. This is actually a really good fakeaway meal great if you don’t want to spend money on them at the moment. It is easy enough to make, of course, you can make your own flavours. This no doubt will be served with some fries from the local takeaway.
Saturday- Lentil Nuggets, this is a meal which we did not get around to having last week. So I have decided to add it again to the meal plan hopefully we do manage to get around to consuming this meal this week. It is one which I am actually looking forward to. This again is another new recipe for us I have not cooked with lentils for a very long time now.
Sunday- Spinach and Leek Lasanga, I needed to purchase some leeks for another recipe. I thought a good way of using the remainder of the leeks up would be to make this dish. I do not think I have ever had a veggie lasagna in the past so this will be a new one. It is a meal which I am actually looking forward to making and seeing what it is like.
