Today I am going to be sharing with you the meals which we have been consuming this week. Of course, it is not a normal week at all. Jess home because her nursery is closed as a result of Covid-19. We managed to get a few bits last week at shopping. This means that we have been able to make some meals. We have to keep adapting because we are unsure if Joe is going to be allowed to stay at home until the lockdown is actually over. Twice this week where we have thought he is going to be deployed to help. Currently, as I write this he is at work but coming home every single night which is a bonus.
Monday- BLT Pasta, this is a meal which we have made in the past it is a pinch of nom recipe. I was unsure how Jess would like this meal however, this is something which we enjoyed because there was a clean bowl. This is a meal which you would not think of making however, it is full of flavour. It is a healthy meal and for sure one which we will be making again in the future, it is one which is great for lunch as well. I know this is a meal which people think what that can’t be nice but seriously do not knock it until you have tried it at all. It is a great meal and one which I would recommend trying.
Tuesday- Pizza, the reason we decided that we were going to have a pizza because we thought Joe was going to be away for 3-4 weeks. I needed a pickup up because I was struggling and my emotions were all over the place. It was literally sprung upon us and usually, we get to prepare for when we are going to be doing solo parenting. It did mean that Joe had to do me an emergency shop because I do not want to take the kids out too much. We did not use the normal takeaway because it was closed as a result of covid but this new takeaway did a lot better pizzas. I am sure we will be using them again in the future.
Wednesday- Chicken Wraps, this is something which was super easy to make. Of course, I ended up having both kids on my own which means it can be hard to cook. I through some seasoning with chicken, pepper and onions. For sure this was a simple meal which was a nice meal. I like making meals which we know Jess is going to eat. Of course, at the moment we do not want to waste food at all because it is so sparse. They were a little bit spicy however, not too hot. For sure this is going to be another meal which I reckon you will be seeing on my meal plan in the next few weeks.
Thursday- Meatball, Spaghetti and Veggies. Meatballs are not something which we have a lot so it was a nice change to have these. We decided to bulk them up and added some leeks and some peppers for sure it was a nice meal. We used a spicy chilli sauce and this is something which was not too hot which is a bonus. Jess managed to eat it I think this would have only been better should we have had garlic bread. We did not have this because it is not essential and we are trying to avoid the shops as much as we can. It was tasty and filled us up that is all that matters at the moment.
Friday- Leek and Potato Bake. We had a lot of leeks and potatoes which we needed to use some of the veggies which we had in. This was an Ok meal however, I am unsure if it is one which I would end up making again. But at the moment we can not be too picky. There was some clean plates when it came to this meal so that is always a bonus.
Saturday- Pork Steaks, Jacket Potato and Corn on the Cob. Such a simple meal however, this was all things which we had in. Sometimes even I want a break from cooking and this was a super easy meal to make. We have not had pork steaks in a long time so this was nice. I remember how much I do actually love Jacket Potatoes they are usually something which I have for lunch instead.
Sunday- Spag Bol, this is a meal which we have not had for a while again. I have decided that we are going to have some of this while Joe is still home. For some reason he can make a way better spag bol than me. I think he is going to end up putting a lot of veggies because we have some which we could use to make it healthier.
