Our Weekly Meal Plan 26th June

Today I am going to be sharing with you our weekly meal plan. I can not believe this is the one last one before we have Troy weaning as well. I can not believe next week he is going to be 6 months old so it is time for weaning. We have decided to use the baby led weaning method. So soon some elements of our meals will be going to the little man. This week is meant to be a boiling week so we are wanting meals which are not going to take a lot of effort and not too long cooking. For sure I do not want extra heat at the moment in the house.

Saturday- Black Bean and Butternut Squash Enchiladas, this is a meal which we have been rolling over for a few weeks now. The time has come to have to make this now because otherwise the butternut squash will end up going bad. It is something different which is something which I am looking forward to.

Sunday-Mushroom Ricotta Pasta, this recipe came around because we had some mushrooms and ricotta to use up. At the moment I like to look for meals which include the ingredient which we have in. This is a meal which I personally did not have because I wasn’t well but Joe said it was a little bit of a bland meal.

Monday- Sweet Chilli Salmon, we have some salmon in the freezer. I think it is one random piece so changed this into some sweet chilli salmon. We had this with salad because this is something which we have been going to while the weather is so hot this week. Sweet chilli is a sauce which we all adore as well.

Tuesday- Lasagna Stuffed Chicken with salad. This is a meal which I would not have thought had it not been for pinterest. We still had half of the tub of ricotta left so this was the perfect recipe to get this used up with for sore. When we made it I could not believe how close to lasagne this actually tasted for sure this is another meal which I will be making again.

Wednesday– Slow Cooked Pesto Mozzerella Chicken Pasta, again I also had some mozzerella to use up. I hate things going to waste at all. To me this is not a recipe which I would make again. Personally it was too dry it needed something like a sauce. We did end up serving this with garlic bread but this is not a meal which I would make again in the future. Pesto pasta is something which I used have a lot of when I was at uni.

Thursday- Veggie Hoisin Noodles, you can never go wrong with a veggie stir fry. This is always a good way to get some veggies in your family. We actually had all of the ingredient which is a huge bonus because of the fact we do not have to got to the supermarket. For sure this is a meal which we will be adding the meal plan again I am sure even once we have Troy eating with us.

Friday-Sloppy Joes,this is a meal which i have been fancying for a while so I thought why not get around to making it. I am trying a slightly different recipe to the one which we have used before there is no reason why. I know this is a meal which the whole family will love to consume. If there is any left over they can be served with a jacket potato as well.
