Today I am going to be sharing all the meals which we have been consuming this week. This week may be a bit of a strange one as Joe was home Monday and Tuesday. Before leaving us for a work trip for 5 1/2 weeks fingers crossed player 4 behaves while he is gone. Of course, I only have to feed Jess on a weekend because she eats at nursery during the week. So this week has been a strange one to even try and meal plan for.
Monday- Chicken Fajitas, my parents gave us a kit to make chicken fajitas so I thought I would use this up. It is a super quick meal which both enjoy and for sure it is something which I am unlikely to actually make when I’m solo unless I do it on a weekend with Jess.
Tuesday-Hunters Chicken and Wedges, this is another meal which we adore from Katy’s blog. It’s a super simple one which I can bang in the slow cooker and basically forget about until meal time. I am sure this is one which will go down well. I might even see if I can have a milkshake from our favourite place. After all pregnancy has to have some benefits and I am super hormonal and emotional this week.
Wednesday- Chilli, I have decided that I am going to batch cook a chilli this week. This is not something which I have had in a while. I think I will serve this one with some rice and then stick the leftovers in the freezer for a day when I do not have as much energy. I am trying to avoid ready meals and takeaways as much as I can while Joe is away.
Thursday- Chicken Brie and Leek Pie, I have some ready rolled pastry which needs using up. I thought I would make the Chicken Brie and Leek pie. It is something which is really comforting which is what I feel like I need at the moment. Of course, I will end up making way too much so I will freeze some. I might even splash the boat out and have some chips with this meal.
Friday- Veg Chow Mein, since I am not going to be able to order a Chinese this week. I have decided that I am going to try and make my own veg chow mein. To be honest I am unsure how this will be because it is not a meal which I have made in the past myself. I might have some leftovers for lunch on Saturday I am unsure. But this for sure is one which I am looking forward to.
Saturday- Work From Home Spaghetti, this is a recipe which I am making because I have some courgette to use up. This is one which I found while scrolling through Pinterest and I thought we would give a go. Spaghetti is something which I know Jess will enjoy so that is another good reason to stick it on the menu.
Sunday- Pizza, I picked up some pizza bases which means that we can make our own pizza. To be honest this is something which I love doing. We have not done one of these in a while so I am hoping Jess will enjoy it is as well. I find if you purchase the pizza bases in Home Bargains they are a lot cheaper than the supermarkets as well which is always a bonus.
