Today I am going to be sharing with you our weekly meal plan. This week has seen Joe return back to work after his paternity leave ended. So we have been doing easy meals because we did not know how we were going to find it. Having two children to deal with after work and cooking meals. In truth, it has not been as bad as it could have been. Anyway on to the meals which we have been consuming this week. There is a wide range again so we do not get bored and have the same meals.
Monday- Stir Fry, this is something which we have not had in a long time. It is super easy and something which is full of goodness. It is also a super quick meal which I find great for a Monday when they seem to be so much happening.
Tuesday- Buffalo chicken, rice and veg. I picked up some buffalo seasoning a couple of weeks back reduced in Tesco. Instead of having buffalo wings like it is designed for we are just going to use it with normal chicken. I am going to mix in some mixed veg into the rice and have vegetable rice. Super simple but no doubt a delicious meal.
Wednesday- Cheesy Topped One Pot Mexican beef. I had planned to have this meal last week however, forgot that Joe has a meal out last week. This originally is a Hello Fresh meal, we are not currently subscribed but keep using their recipes. This sounds something different and no doubt a meal which we will love because it sounds like chilli.
Thursday- Mackeral Rice, this is a super simple dish which I found. It is a cheap meal which is always a bonus in January when the pennies can be a little bit tighter. This is one which I have added to my Pinterest board as well because I can see me wanting to make it again. Super quick and great for when you do not have much energy left.
Friday- Doner Kebab, it would not be a Friday without a fakeaway. Something which I do not think we have ever made before is a Kebab. We thought we would challenge ourselves and see if we would make one better than the local takeaway. This is also going to allow us to have a bit of bonding while we prepare the meal.
Saturday- Spag carbonara, again I picked up a carbonara sauce reduced when we visited a supermarket. I thought that we would use it up tonight before it actually goes out of date. This is something which we know Jess will eat as well. We may splash the boat out and have this with garlic bread as well depending on how we actually feel.
Sunday- Lentils Veggie Nuggets, this is a meal which Joe picked out. We have some lentils in the cupboard. These are going to be fun again to make I am sure. It will be interesting to see if this is a meal which goes down well with the whole family or not. For sure I will report back and maybe even share the recipe if this is something which we end up loving.
