Today I am going to be sharing with you yet another lockdown meal plan. I am still struggling to find inspiration to make meal plans usually they are something which I love doing. However, at the moment I seem to have lost all interest in making food. I am trying to challenge myself to make 3/4 new dishes a week. To expand the amount that I can cook once this is over.
Monday- Asparagus Stuffed Chicken, Jacket Potato and Spaghetti Hoops. This is a meal which has come around because we had some asparagus which we needed to use which had been delivered in a veg box. I am unsure if this is a meal which I would make again because I found the chicken to be a bit too dry for me. I might have to add a sauce with the chicken if I was to make it again.
Tuesday- Chicken Balti, this is a pinch of nom recipe which I have been going to make for such a long time. With all the added time which we have on our hands this is something which I have got around to. This was a great meal which I loved for sure we will be making this again. Even Jess managed to eat a complete bowl and loved it.
Wednesday- Sausage, Kale and Chilli Pasta, again this is a meal which came around because we had some kale to use up. I spent a while looking for a meal which we would be able to use it in and this is when we came up with this meal. It was really nice and of course with it been a pasta dish of course it went down so well. I think this is one which we will be making again of course.
Thursday- Turkey Meatball with Stir Fry, I really fancied a stirfry it is not something which we have had in a while. I really should have made the meatballs and put them in the fridge so they could have firmed up. This is something which I would do should we make them again. Again this is a meal which I am going to make again I think but maybe not for a while.
Friday- Pizza, we decided that we going to have some fresh pizza from Asda. This means that we are less likely to order a takeaway pizza. I just do not want to have to wait ages for this to arrive. We love the pizza counter so we thought that we would have this as a treat.
Saturday-Prawn and Veggie Pilaf, this is a meal which we have decided because we have a range of veggies which needs using up. This is something different and I am hoping this is going to be a meal which goes down so well. I have not make this before so fingers crossed. I think I will have to report how well this meal goes.
Sunday- Turkey Thyme and Leek Meatloaf, Wedges and Spaghetti. This is a meal which Joe decided we have a lot of leeks again to use. I have now stopped this veg box because they were sending us stuff which we had not got round to using. Again this is a new meal for us and hopefully this is a meal which everyone will enjoy because I know I will. I am going to make some wedges because we have not had them in a while.
