Our Weekly Meal Plan 21st February

I can not believe it is Friday already and we are towards the end of February. Seriously I do not know where the time is going at all. Today I am going to be sharing with you the meals which I am going to be having this week. Until Thursday night it is just me who is going to be having tea at home. Joe is away with work for a few days and of course Jess eats at nursery. Of course sometimes she does want a snack when she gets home.  So on to the meals which have been on the menu this week.

Monday- Pulled Pork, this is something which l made a while ago however, there was too much and I froze some. We had some fresh soft bread in and I had this. It was actually a very tasty meal to be honest. For sure something I will be having again in the future.

Tuesday- Cajuin Chicken Pasta, this was a ready meal I picked up reduced in ASDA. Again it was another meal out of the freezer. I stocked up on them in case Troy would not let me cook. I think I am going to batch cook when we know Joe is likely to be away so I have some food.

Wednesday- Chicken Chow Mein, this is a ready meal. I know I am going to feel rubbish this week not having home cooked meals but at least it is food. This is one which I am unsure how it is going to be but hopefully it has some flavour to it. Chow mein is something which I love and make from scratch if Joe was here.

Thursday-Chicken Pad Thai, this is the last day of having ready meals. Again pad Thai is something which I love to be honest I love most Asian food. We have made one ourselves before. This I am unsure how it is going to be but as long as it is edible I am happy. I might need a large glass of wine after doing all the night feeds this week. Usually Joe does at least one.

Friday- Chicken and Spinach burgers, it wouldn’t be a Friday without a takeaway. I actually let Joe choose all weekends food. This is a recipe which he found on my Pinterest board. To be honest you can never go wrong with a good chicken burger. For sure this is one I am looking forward to having.

Saturday- Salmon pasta, I am trying to consume more fish if I possibly can. This is a pasta dish which had a creamy sauce so it is going to be a winner. I am unsure what we are doing this weekend. So we have a quick easy meal in case we decide to have a busy day out somewhere.

Sunday- Spicy Mexican Chicken and Rice Bake. Rice dishes are not something which we often have so this is going to be a nice change. Mexican is something which I adore anyway so I am sure it will go down a treat not just with me but the whole family.
