Today I am going to be sharing with you the meals which I have been consuming this week. Of course, I have had t feed Jess at the weekend when she has not been at nursery. However, the rest of the time there has just been me having meals. Joe is still away and I have managed to make these meals with only having to pop to the shops for little bits. I do not want to be carrying too much shopping now I am 30 weeks pregnant. So on to the meals which I have been consuming this week.
Monday- Leftover Chicken and Jacket Potato. My parents came over on Sunday and we ended up having a roast chicken dinner. There was quiet a bit of the chicken which was left so I have decided to have some of this with a Jacket potato for tea. It is a super easy meal however, it will get some of the chicken used up and feed me for another meal.
Tuesday- Leftover Chicken with Chips and Spaghetti Hoops. Again there was still some of the roast chicken left. After this meal it should all be gone. I already have some chips in the freezer and spaghetti hoops in the cupboard. This is going to be another simple night I am unsure if Joe’s mum is going to be ringing tonight so I need something semi quick so tea is not too late.
Wednesday- Lasange and salad, this is something which I have in the freezer from where we have batched cooked. It is a meal which I really enjoy anyway so I can not see this been any different. I am going to serve this with some salad, I may even treat myself to a small garlic bread. This for sure is a proper home comfort meal for me.
Thursday- Steak Stiltion and Ale Pie with Chips, this is another meal which I think I have two portions of in the freezer. I am going to get one out and serve this with some chips. It is a meal which we made a few weeks ago. With the weather becoming a little bit more chilly pie is for sure something which is going to be well welcome. It was originally a Charlotte Taylor recipe.
Friday- Veg Chow Mein, this was one which I was meant to have last week. However, because of the horrid rain I decided to take something out of the freezer instead. I am going to make it this week because Chinese is something which I have been fancying however, I can not just get a takeaway for one person. I think this is the meal which I am looking to the most this week.
Saturday- Hunter Chicken and Wedges, this is a meal which we did not get around to having before Joe went away. There was a number of reasons why. So I have decided instead of letting the ingredient go to waste I am going to make it for me and Jess. I am unsure if Jess has ever had hunters chicken before but I am sure she will enjoy it. I may do a small portion of mixed veg as well for this so we have some veg in our diet.
Sunday- Pizza, again because my parents came over for food last Sunday. Jess’ and I did not get around to making the pizzas which we were going to make. So we have decided to do it this week instead. I purchase the pizza bases from Home Bargains as they are cheaper than the supermarkets then we add our own toppings. I know this is going to be something which Jess enjoys as she loves to be helpful when making food.
