Happy New Year everyone fingers crossed this year is not going to cause as many problems as the last year did. I have taken a few weeks off meal planning. To be honest I barely blogged for the last month or six weeks because I am going to admit it I don’t know where time went. I am hoping to be a bit more organised and be able to post more regulars. Blogging is something which I really enjoy and I want to document my life so we can look back on everything in the future. Anyway on to the meals which we are going to be consuming this week. I have decided that this week is going to be a lot of healthy meals because this is something which I craved.
Saturday- Lasagne, this is a meal which I have not made for such a long time. It is a recipe which I have found in one of the recipe books which I have. Currently I am trying to use a lot of the cook books which I have if I do not like them I will be getting rid. This is from one which I have not used in a long time. It does take slightly longer to cook which is one of the reason’s it a weekend meal. This is going to be served with a side salad as well.
Sunday- Melt in the Middle Fishcakes. This is a recipe which Jess choose it is in one of the pinch of nom books sadly I am unsure which one it is off the top of my head. It is one which we have made in the past. Fishcakes are something which you think are going to be hard to make however, are not. Again I think this is going to be one which we have with another side salad.
Monday- Veggie Spag Bol, meatfree Monday’s are something which I want to attempt this year. So what better way to start this than doing a veggie spag bol. Again this is a pinch of nom recipe it does have lentils instead of meat. I do not think I have ever made a veggie spag bol before so I am looking forward to trying it. For sure, I would love to cut my meat consumption down this year.
Tuesday- Garlic and Lime Balti, again this is another pinch of nom recipe. I have all three books currently. This is one which we have again made in the past. We have not had a curry in a while for some reason. The only thing reason which is why this does not get made often is because you have to marinade the chicken overnight. I never can remember to be that organised. For sure this is one which I know all of the family are going to enjoy. I will serve this with rice and not make it too spicy for Troy.
Wednesday- Beef and Ginger Stirfry, this is something which is going to be super easy to make. We all know the first week back at work you just want some quick and easy meals to make. I think this may be one which we have with noodles. I am making this completely myself because then there is not too much salt in the sauce for Troy because we are baby led weaning still.
Thursday- Tex Mex Meatballs with Spicy Rice, this is another pinch of nom recipe. Can you tell what books I had to hand when I was meal planning. Meatballs are something which we really enjoy. One of the suggestions to serve with this is spicy rice. So this is one of the reasons why we have chosen to do this. It could work it may be one which we love. Again we are not going to make this too spicy because we do not want to blow Troy’s head off with spice at all.
Friday- Baked Chimichanga, again we are going with a Mexican meal. This is going to feel like a little bit of a fakeaway. It is another new recipe for me to try and make because this is something which I want to do make more new recipes this year. This is not something which I had heard of before I found this in the third pinch of nom book which is the newest one.
I really enjoyed making this meal plan fingers crossed this is something which keeps up. Meal planning for me helps save money by not buying food which we do not need and also reduces our waste which is a huge bonus. I hate food waste full stop.
