Today I am going to share with you the meals we have been making this week. I have been trying to use up some ingredient because there was thing left in the fridge before last weeks shop. Despite this I have tried to do some new meals because this is something which I am enjoying. At the moment I still am trying to do quick meals on a Tuesday and Wednesday when Joe is at work. Anyway on to the meals which I have been consuming this week.
Saturday – Sausage and Spinach Pasta Bake, this is a meal which we have made a while ago to be honest. It is one which the whole family really enjoy I think this is because ti is a pasta based dish. I made this because we had some spinach which needed to be used up.
Sunday- Chicken Fajitas, this is a meal which we have not had in the longest time. This is something which we used to have pretty often anyway. So it is going to be a treat to have this again on our meal plan. It is a pretty quick and easy meal to make this.
Monday- BBQ, we ended up having a BBQ because it was a really nice day. We also had it with my parents which was really nice. It is the first time we have seen them since before lockdown. For sure I think this really helped Jess because she never has gone that long without seeing them ever.
Tuesday- Chicken Korma Melts with Mexican Rice, this is recipe which I have seen on the BBC good food website. This is something which sounds different but in a very good way. Due to this it was the reason that this meal got added to our meal plan for sure it is one which I am looking forward to making as well.
Wednesday- Bacon and Leek Risotto, this is a recipe which we are making because we have some leek and also bacon which needs using up. I have not made this for a long time and I really wanted to be able to take a picture of this to update the picture on the recipe. I think this should be a meal which goes down well in this house anyway/.
Thursday- Curried Vegetable Pie, again this is another meal which I found on the bbc good food website.. I was looking for a recipe which used shortcrust pastry because this is something to use up. I came across this meal and I thought that it was going to be a good one to try. Fingers crossed this is a meal which we all end up loving because this is a risk to take. I think it should be one which we may have clean plates for.
Friday- Mushroom and Chickpea Burgers, I have some mushrooms to use up. Joe has been saying for a few weeks that he would like to be able to have a burger. So I decided to add a veggie burger to the meal plan. They are something which I usually love so fingers crossed Jess does to she hasn’t had them before.
