Today I am back sharing with you another weekly meal plan. It seems like meal planning is all I do at the moment. For some reason meal planning has got a little bit easier for me again at the moment. I had a day where I basically spent most of it on Pinterest looking at meals. I think this may have helped massively. For some reason I want to cook more which is great I think I may be out of a slump. Currently we still have everyone home how long this is going to be for I am unsure yet. Anyway on to the meals which we had this week.
Monday-Salmon Fish Fingers, this is a recipe which we found on a pinch of nom. As you can tell this is a site which we love using. Making our own fish fingers is not something which I would have thought about doing. We had some salmon in the freezer anyway and we had this with wedges and spaghetti hoops. To be honest this was a nice simple meal but really tasty for sure something we would make again.
Tuesday- Three Bean Chilli and Rice. This is a meal which we decided to do because sometimes we like to have meat free meals. Otherwise I have a feeling that this week would have easy become a meat heavy week. This is a meal which I wouldn’t make again. All it all it seemed to taste of was spice which is not something which I loved this time.
Wednesday- Cheesy Pizza Balls, Chips and Salad. This is a recipe which we had found on Kate Ellison Video. This is something which I would not have thought about making if this was not for this video. They tasted like the dominos ones of course, they did not have as much fat as these ones. Even Joe said this was a meal which was tasty for sure this is one which we will be making again in the future.
Thursday- Chicken Pad Thai, this is a meal which I have not made before with chicken. I think we have made this with prawns before. For some reason this is a meal which we used a different recipe and this did not seem to be as saucy as the ones we have made in the past. I also think it is maybe because we only had one egg in this recipe.
Friday- Taco Bell Quesarito and Nachos. This is a meal which I am really looking forward to we have a nacho kit in the cupboard which could do with getting used up. This time seemed a great time to get it used up so this is why it is on the meal plan this week. I also fancied a Mexican meal and this is when I came across this taco bell recipe. Taco bell is somewhere were we love to go so it seemed perfect to make this as a fakeaway.
Saturday- Big Mac Quiche and Salad, this is another meal which I did see on pinterest. It is a slimming world meal which I thought would be nice for a change. This is a meal which even Joe liked the sound of which is always a huge bonus. I am going to serve this with salad because I think it would make a nice change from chips to be honest.
Sunday- Prawn and Pak Choi Noodle Stir Fry, stir fry is something which we have not had for a while. So I thought we would add this to the meal plan this week. Since there is no chance of us returning to normal any time soon we thought we would add this nice and simple meal. Let’s face it on a Sunday who can be bothered to do some cooking.
