Our Weekly Meal Plan 15th January

Today I am going to be sharing with you the meals which we are going to be having this week. Again I am still trying to go through my cookbooks and make sure that we like meals out of them. Passing the ones we don’t to others. I am still trying to watch what I eat despite the fact I am trying to work out 5 times a week at the moment. Fingers crossed we have meals which all of the family are going to enjoy and consume
Saturday- Chicken Gyros this is something which I have fancied making however, I have not found a recipe in order to be able to do this. This week I have actually found one which was simple and healthy too. For sure this is one which I am looking forward to using. We are also trying some of the McCain’s naked chips which I have seen some of the slimming world accounts that I follow raving about.
Sunday- Mushroom Dream and Salad. This is a recipe which I saw linked up in the meal plan linky. I really should have noted who has actually shared this. This is going to be a nice change as it isn’t something we would normally consume. It is another veggie meal which is a bonus I am trying to cut down our meat consumption. I chose this because we have some mushrooms to use up and also puff pastry in the freezer.
Monday- Cauliflower and Chickpea Curry. This is meat free Monday meal this was one from one of the cookbooks. We actually have some cauliflower which needs using up after making the veggie burgers last week. Curry is something which we all love in this house. I am going to serve this with some rice. I might add some spice as well because we all love some spice of course it will not be too hot for Troy.
Tuesday- Linguine with Ham and Egg. We have a ton of eggs to use up. We got them when we ordered from the fruit man last week. I was looking for some recipes to make with them. We found this recipe which is a student recipe apparently. This may be served with garlic bread. This is going to be a simple meal which I might need by Tuesday. For sure home schooling is kicking my bum at the moment.
Wednesday- Sausage Leek and Mash Pie with Mixed Veg. This is a recipe which I was supposed to be making last week. However, we ended up with some leftover veg and turned that into a soup instead. So we have decided to roll over this meal to this week. We might need it if the weather stays this cold.
Thursday- Salmon Pasta, again this is going to be a simple meal. Salmon and fish is something which we all love. This is one which doesn’t actually take that long to make. It doesn’t have a lot of ingredients either. Again this was in a cook book it is a healthy meal. I am still trying to eat healthy during lockdown. I can actually see the difference now in some of my clothes.
Friday- Barbecue Bacon Burger With Cheesy Chips. This is a meal which Joe decide that he wanted to add to the meal plan. We have not had a meat burger for a while and this sounds like a meal which we would order in a restaurant. For sure it sounds like such a good fakeaway. I think this is going to be one of the meals which I can’t wait for this week.
To be honest I found it pretty easy to make this meal plan this week. I feel like we do have fair wide range of meals. At the moment I am enjoying using some of the cook books which I have. Eating healthy is something which I am still doing . So if I can salads and veg to meals this makes me happy.
