Our Weekly Meal Plan 10th April

Another week of lockdown had past and we have arrived at Easter Weekend. Of course, we have no plans really this year I think Jess and I may do some baking to make it feel a little bit like Easter. There is no sport for us to watch and we can not host a bbq. Usually we go to a zoo over the easter period so we will have to go to one of the virtual ones. Anyway on to the meals which we have been consuming this week. I have been loving finding new recipes an trying meals which I may not have done normally.

Monday-Veg Thai Red Curry, this is a recipe which I made because we had a ton of veg which needed using. Red Thai curry is something which we love anyway. I think if I made this recipe again I would have to make it with more Thai Curry Paste. However, this is a meal which everyone ate and at the moment that is a winner in my book.

Tuesday-Creamy Pasta with Asparagus and peas, this was a recipe which I found on BBC Good Food. I was sent some asparagus in a veggie box which I ordered. I had never cooked with it before so I thought that this would be a good way of using it. It surprised me and and this was a meal which I really enjoyed simple yet so effective.

Wednesday- Chicken Parmigiana and Jacket Potato, this is a meal which I think I saw on someone meal plan last week. I can’t remember whose it was at the moment, however, I thought it was a new recipe which I was willing to try. Again this is one which the family loved so I am sure it is one which maybe remade in the future. It was super simple to make as well which is always a bonus.

Thursday-Freezer tea, essentially I forgot to take anything out for tea. I really should have taken some chicken out. I forgot sadly so we ended up having bits out of the freezer sometimes these are the best meals. We had some fish fingers, chicken nuggets and chips. It was almost like been a child again.

Friday- Cod Fillet Burgers, it would not be Good Friday without having some fish. So I have decided that I am going to make some Cod Fillet burgers instead of having a good old chip shop. I do not think I have ever had a cod burger fillet burger so it is going to be something different. I am looking forward to making this as well.

Saturday-Enchiladas, Mexican food is something which I love. So I have decided to make some myself I did this because we have a lot of time which we are going to be spending at home. It is a meal which takes a whille to make as well so this is one of the reasons I have added it to the menu currently. For sure this is one which I know both Joe and I am looking forward to this month.

Sunday- Bacon Mac and Cheese, this is a meal from Katy Kicker which I have decided to make. It came up in my feed the other day again. I have some mac in the cupboard so I thought I was going to get some use out of this. I do not think I have had mac and cheese for a long time so another reason to make it .

Of course, like every meal plan, this is linked up with the amazing Katy. I get a lot of inspiration from her and the linky which she runs. If you are struggling and consuming the same meals I would recommend checking it out. You may find a meal which you love.
