First of all, how it is August this year seems to be flying by. For sure I know it is not going to slow down there are some exciting things coming up. Today I am going to be sharing with you the meals which I have been consuming this week. This is the last week of solo parenting which I am so glad about because it means that Joe can help me cook again. Again, of course, there are a few meals from the freezer. I find it easier and batch cooking, of course, saves money which is something which we all love. So today I am going to share the meals which I have been consuming.
Monday – Herby Chicken Wrapped In Bacon with Jacket. This is a meal which I have made a few times now it is super simple however it is something which you can just stick in the oven. I am going to do a jacket potato with this and maybe some mixed veg. This is a recipe which got from Katy on one of her lives.
Tuesday- Lasagna and salad, this is one of the meals which I have in the freezer. I am going to be sharing the recipes for this medal in the coming weeks. I think it is one of the easiest ways to get veg into my diet. Again this means that I am not going to have to cook and with the lack of energy I have this is great. This will be served with garlic bread or salad depending on my mood.
Wednesday- Risotto, this is one which I have not had in a long time. This is another meal which I have had in the freezer and want to get it used up. It is that bad because I can not remember what flavour this. For sure is a meal which I am looking forward to this week. I do not know if this is a meal which I would make again.
Thursday- Creamy Ham pasta bake, this is a meal which we had a few weeks ago. For sure there was plenty left which meant some went in the freezer. I am going to have some more of this week. It does mean that there is going to be more space for more meals or bargains. I reckon this
Friday- Takeaway, because Joe is back and I do not know what time he is going to be back. To be honest, it is going to be nice to have him back because I have missed him. I am thinking about having a Chinese for this meal. For sure
Saturday- Chicken Curry, we have a number of jars in the cupboard. I am unsure what we are actually going to be doing this weekend. I could easily stick this in the slow cooker or cook it when home. I have not had a curry in a long time so this could be fun.
Sunday- Pulled Pork Sandwiches, Jess has a 3-hour birthday party so I do not think she is going to want to eat. I fancy doing something in the slow cooker which is how we got to this meal. Theses may be served as part of a meal or on their own, I have not decided yet.
