Meal Plan 17th May

Today I am going to be sharing the meals which we have been consuming this week. Again this week we have been trying to use some of the things we have up this week. I had a look in the fridge and the freezer to see what we could use. This is how I have managed to come up with some of the meals which we have had this week. There are not too many meals which are a repeat which I always find great. You do not want to get stuck in a rut and have the same meals all the time. So on to the meals which we have consumed this week. Hopefully you can find something which inspires you.

Monday- Spicy Spaghetti with garlic mushrooms. I have some mushrooms which need using up so I jumped online to find a recipe which included them. As a result I came across this one it something which I would never have thought about making. Garlic mushrooms are something which I love but would never thought of teaming with spaghetti.  However, it is a meal which I am highly looking forward to. I may even share the recipe if I enjoy it enough so keep your eyes peeled for that.

Tuesday- Chicken and Chorizo Jambalaya. Again I have gone with something which I never have made in the past. I wanted to do some different meals this week. Chorizo is something which we all love in this house so this is going to be a winner. Again this is going to be a meal which I may end up sharing the recipe with if I feel like it is a meal people should make.

Wednesday- Steak, Egg and Chips. I managed to pick up of the 16oz steak which Aldi do. We are going to half this and have it with the sides. This is something which we have done in the past and really enjoyed. Steak is something which we rarely have so this is going to be a good treat for us. I feel like we need a treat I have not been feeling that amazing recently since my knee started playing up.

Thursday- Spicy Sausage Chilli and Rice. This is a meal which I do not think I have made since November time. Originally this is a hello fresh meal but I have made it a number of times since stopping the subscription. This is a twist on a classic meal however, it is one which we still enjoy. I know there is some sausages in the freezer and I am going to use them up.

Friday- Homemade Fishcakes and Chips, this is one which I got from Katy. Fishcakes are something which we have not had in a long time. For some reason I have really gone off the shop bought ones.  I fancied making my own version of these and hopefully these turn out to be really nice. These may end up been served with salad depending on the weather.

Saturday- Ham and Leek Cannelloni, this is a meal which I found on pinterest. I have some leeks to use up and thought this would be a good way to get them used. For sure it is something a little bit different to what we would normally make. I do not think I have ever had cannelloni so I think this is going to be interesting for me.If this is something which we enjoy I will be putting this up as well.

Sunday- Slow cooked butter chicken, this again was from pinterest. I love the sound of it for me it sounds like it is a creamy curry. Curry is something which we all love to consume in this house including Jess. I am sure she will eat it all up. This is going to be served with rice and maybe some nan bread.

Meal Plan 10th May

Today I am going to be sharing with you the meals which we have been consuming this week. I got a lot of inspiration this week from the meal plan linky last week that Katy hosts. Sometimes I would be lost without this linky. This week, of course, has a bank holiday in it which means that we have to feed Jess for another night. I think this is the only difference to a normal week. This weekend I am unsure what we are going to be doing so these meals could end up changing of course. For sure this week, I am looking for to all of the meals which I am going to be making. They are a wide range of different things and I feel like most nights are completely different. So on to the meals which I am going to be consuming this week.

Monday – Creamy Garlic Chicken, this is a meal which we had planned to have last week. However, we ended up going out for my brother’s birthday which I was unsure if we were going to do. This is a meal which I have got from the Pinch Of Nom cookbook which I mentioned in my April Favourites. This is one of the tastiest meals which I think I have cooked from this recipe book. I served this with rice and this is something we all enjoyed. Even Jess managed to eat it all which is always amazing. For sure this is another recipe which I will be making again in the future.

Tuesday- Quiche Lorraine Frittata and New Potatoes.  This is a recipe which I got from Kim. I thought that this was something different from what we normally make. I am going to be making my own quiche for the very first time. I always love to undertake a challenge when it comes to recipes and for sure I think this is going to be. There is likely to be leftovers for sure this is going to be a couple of lunches. For the evening meal, we are going to be having it with herby new potatoes. I will be actually having it with salad when I am going to be using it up.

Wednesday- Mixed Veg Rissotto and Spicy Chicken. This is another recipe which I got Katy’s Linky this one was from Joleisa. This sounds like something different for sure I have made risotto but I am not sure I would have thought of using mixed veg. I love finding new ways of making meals which I have previously. This is a simple meal and for sure this is going to be one which I can see me making again in the future. I can not wait to have this one it is going to be perfect for the summer I am sure.

Thursday- Chicken Fajitas, this is a meal which I adore. We have not had them for a long time so I thought I would add them to our meal plan this week. I am going to season them using spices which we already own instead of actually purchasing a kit. This is going to be interesting to see how this goes. This does mean that I am going to be saving money because the kits can be expensive.  This meal is one of my favorites it is such a classic. It is so simple to make as well and quick which is what we want towards the end of the week when we are tired.

Friday-Fish Burgers and Sweet Potato Fries. I know another week another burger, this is not something we have often. We still have a ton of fish in the freezer which we purchased a reduced price. I am going to turn these into a healthy fish burger which is another healthy alternative. For sure fish burgers are not something which we would order should we be in a restaurant but again I think it was Pinterest which made me want to make this meal. We have decided that we are going to make sweet potato fries instead of normal chips. I will let you know how we get on with this meal.

Saturday- Cheeseburger Pie.  This is a meal which I saw on Katy’s live a few weeks ago. This is something which I would not have seen had it not been for her live. It sounds so different because I know this is something which you would not normally get at a restaurant. If this is a meal which we really enjoy I will share the recipe for it. I feel like this could be the ultimate comfort food and this is something which I need at the moment. Due to my knee and a few other things which are going on I am not feeling amazing. Hopefully, this meal is going to to be one which the whole family enjoy.

Sunday- Taco Hotdogs, Fries and Corn on the cob. This is a meal which I found on Daisies & Pie meal plan.  For sure this is not something which I would have thought about doing either. We have made taco’s a few months ago however, these are on hotdogs. This is one which I am looking forward to and I am sure that Jess and Joe will love this one. I reckon this is another meal which we could see on our meal plans again.

Meal Plan 3rd May

Wow, another month this does mean that I have been meal planning for 4 whole months. I hope you have enjoyed actually seeing the meals which we have been consuming over that period of time. There has been a wide range of them. Today I am going to be sharing another meal plan this is week is going to be a little bit different. The reason for this is Joe is actually away for a couple of night this week which means that I am going to be eating food on my own. Obviously, I do not want to be cooking as fancy meals so I am going to try and use a few things up which we have in the freezer.  So on with the meals which I am going to be consuming this week.

Monday- Leek and Potato Pie with Chips. This is something which we have had in the freezer for a while. Joe is actually away this evening so I wanted something just for me. I actually purchased this reduced it is a Pukka Pie. I wanted something super simple because it can hurt to stand and cook due to my injured knee. For sure this is something which I enjoyed. Should I be able to purchase another one reduced I would do this. I am sure this is something which Joe would like as well. You could make your own if you really wanted to do this.

Tuesday- Chicken Katsu Curry, this simple meal for us. We picked up a jar in Asda which was reduced I do not know why this was the case. Katsu curry is something which we love consuming. We served this with rice for sure if we can find the jar of sauce in Asda. If we can not we can always make our own Katsu. If you have not tried it for sure it is something which you need to do. I think this is one of my favourite meals which I have had in a long time. The first time I had this was in Waggamamas only about a year or so ago.

Wednesday- Slimming World Ready Meal, I have one of these in the freezer. Again I am on my own however, this is going to make a lot of room in our freezer. There is a lot of packaging on this meal I can not remember what the meal is. It has been in the freezer for a long time and I do want to be rid of this. I think I must have picked it up in Iceland I will report how good these are. I know there is a number of my followers already on slimming world which is amazing.

Thursday- Pork Black Bean Stir Fry,  we have some pork in the freezer and some stir fry sauce. We need a quick meal because Joe may be home late tonight. So we need something which we can do very quick this is going to be a fast but tasty meal. I am unsure what I am going to be adding into this meal. Stir Fry is something which I am looking forward to it is such an easy meal and one which we love. I do not think we have done one with Pork for a long time.

Friday- Buffalo Veggie Burger, this is something I found on Pinterest. Joe has been saying that he fancies a burger for a long time now. It is something which we do not have a lot for some reason. I do love having a fakeaway because it does stop us ordering a takeaway. We are trying to save money and having a fakeaway helps us do this. I think I am thinking I am going to serve this with some chips as well. For sure I think this is one of the meals which I am looking forward to the most this week.

Saturday- Penne Pizza Bake, this is another meal which we found on Pinterest. Pasta is a meal which Jess loves and of course, she does loves pizza as well. For sure, this is one I can not wait to see how it comes out. This could go one or two ways hopefully it is really nice and this is going to be something which I will share with you. Without Pinterest I am unsure where I would actually manage to get half of the inspiration which I do. I would not have thought of doing this myself.

Sunday- Meal out or BBQ, it is my brother’s birthday this week. So my parents, him and one of his friends are coming over. Depending on the weather to what we actually do. If it is warm we are going to do a BBQ like we managed to host at Easter. If we are not lucky enough to have some amazing weather. We will be actually having a meal out somewhere if we do not manage to have a BBQ. It will be nice to see my parents even though it only has been a couple of weeks it is always nice to see my folks.

Meal Plan 26th April

Another week has past and it’s close to the weekend again. I do not know about you but I feel like I need it after such a busy Easter weekend. This week again has been trying to use things out of the freezer, it is come to the end of the month. We have spent a lot of time and money on the garden which means that we are running a bit low on funds. I have managed to do our weekly shop again for around £25 and this includes the food for the BBQ which we had on Easter Sunday.  So I am going to get on and share the meals which we have been consuming this week.

Monday- Sausage, Pepper and Onions with pasta. This is actually another meal of course we found on pinterest. We had some sausages left over from the BBQ so I thought this was a good meal to use them up. For sure this is something which we would do in the future should we have any sausages.

Tuesday- Herby Chicken wrapped in Bacon with New Potatoes.  I was actually watching Katy Instagram live where she was doing a meal plan. She mentioned that she was going to make this meal.. She actually inspired me to make this meal. It is something which we have done similar of in the past. It sounds like it could be one which we do more as the weather becomes nicer. All you do is slice the chicken in half fill it with herby cheese and wrap bacon around it. For a change we are going to be serving this with new potatoes.

Wednesday- Meatballs and Pasta. I actually made the meatballs a while back and froze them. I think I did this because Joe was not home. There is enough for us both I seem to remember these are the ones which have been filled with mozzarella. We have a pasta sauce which will mean that it’s not dery . I may even purchase a garlic bread to go with it if we fancy it. I love making too much food and then end up freezing them they are great for the end of the month.

Thursday-  Chicken Pad Thai, this is one which we did not get around to consuming last week. I seem to remember one of the meals actually did us two meals. So we decided to move this one across and have it this week. I just need to remember to get the chicken out of the freezer. The other ingredients are actually all going to be still in date so we can still consume.

Friday- Chilli and Lime Cod Fillets, we actually ended out up going out on Good Friday. For a meal with my parents so this is another meal which we did not eat. So I thought that I would make it this week so that no food did go to waste. We do hlasagnaave a lot of fish in the freezer at the moment so they may be more fish meals in the weeks to come. I can not wait for this meal because it is going to be so nice.

Saturday- Pork Steaks with Mushrooms and rice. This is another meal which we actually skipped from a couple of weeks ago. I actually forgot to get them out of the freezer which means that we did not have them. We had sloppy joe’s instead because we had some spare mince. I think this is going to be a good meal and one which Jess is going to eat. It is something different and pork steaks are something we have not had in a long time.

Sunday- Lasagna is another meal which we have not had in what seems like a long time. Watch it now we will have this a couple of times before May is over now. I actually found some mince in the freezer so I came up with this meal. This is something which Jess loves so much so I can not see why she will not clear the plate. No doubt I will make more than we need for this so we can put some in the freezer. I may serve this with garlic bread or some salad.

Meal Plan 19th April

Today we are going to be sharing the meals which we are going to be consuming this Easter Weekend. Of course, this week is not a normal one. We are actually having to feed Jess 4 times this week.This is double the amount of meals we normally have to do due to Easter.  There is also a day when she is not going to be at Nursery because we are in York for an event. I would like to think that there is a wide range of different meals this week. Hopefully some of them will give you inspiration for some meals which you want to consuming yourself in the future.

Monday- Chicken Parmigianna and Jacket Potato. I saw someone unfortunately I can not remember who it was in Katy’s Linky have this meal. I had some chicken which needed to be used up and also some mozzarella. i thought that this was a great way to use both up. This is a meal which is a little bit different to something which we would normally make which is always a bonus. I do like to keep things fresh when it comes to meal planning.

Tuesday- Bacon and Sausage Casserole. This again is a meal which has come around due to us having things in the freezer which I wanted to use up. We had some bacon and sausage alongside some parsnip and swede. So I decided to have a google and see what kind of meals I could make using these items. This is how I came up with the bacon and sausage casserole. I am looking forward to this meal because it is something different and not something which we would have normally thought about making.  I think this is one of the reasons I love pinterest so much.

Wednesday- Prawn Curry, recently I purchase a large number of prawns reduced and froze them. I am going to get one of the packets out and make then into a prawn curry. This is such a simple meal we are going to be doing this as we will have been in York all day. Jess and I for an event which means that when we get home we want something quick because she does have nursery the next day after all. I will be serving this with rice and of course, I am not going to make it too hot as it is also for Jess.

Thursday- Chicken Pad Thai,I think this is one of my favourite meals at the moment. You may remember we made a simple shrimp pad thai. I fancied making something along this lines I had some more chicken to use. So this is where the idea of a Chicken Pad Thai came from. We also had all of the ingredient nearly in for this meal so I thought it would be a good meal. Of course, this is the last meal of the week where we do not have Jess. This is why we have chosen a meal which Jess may not actually eat.

Friday- Chilli and Lime Cod Fillets, this is a meal which Joe and I will consume. Jess is going to have some fish fingers and chips. This is going to be a split meal which is not something we would normally do. However, we wanted to have a traditional good Friday Meal of fish. We had the Cod in the freezer from when we had purchased i the reduced section. I am unsure if we will have these with wedges or chips. This is hopefully going to be a healthier option instead of having traditional fish and chips.

Saturday- Takeaway, we are actually going out on Saturday.  I have a feeling that we could end up home late so we want something simple to be able to have. This is our monthly takeaway treat because we are trying to cut down on the number which we consume. I could not tell you which takeaway we are going to consume yet as we have not decided. I am unsure which one I fancy at the moment. In all honesty this could end up with us having a slow cooker meal instead.

Sunday- BBQ, fingers crossed. If the weather is as nice as it is meant to be this is what we are thinking about doing. I am unsure if we will actually end up having one or not. We are thinking about having my parents over and doing an Easter egg hunt for Jess. I am unsure if this is something which we will end up doing or not. I guess I should have a meal on standby in case the weather does turn and become horrible again.

Meal Plan 12th April

Another week has managed to speed past us. I am unsure how the hell this has happened for some reason since February time seems to have whizzed by. We have managed to meal plan every single week and some of these have been harder than others. This week we have had to make meals which we can use in the slow cooker because we was unsure what hours Joe was going to be working. We have been able to eat meals together which is something that is important to us. Today there is a wide range of different meals. The majority is because we can use the slow cooker to cook these meals.  So with further ado we are going to share with you the meals we have been consuming.

Monday-  Salmon Noodles, this is a meal which Joe choose as a result of loving noodles. We did manage to pick up some Salmon reduced in the supermarket. This is the way we manage to keep the meal plan of our weekly shop to under £30 per week. This is a meal which we would not have done before. It is one which we managed to get from a pinch of nom again. I would recommend checking out this website and book if you are looking to eat a little bit more healthy.

Tuesday- Piri Piri Chicken and Rice again this is a meal which Joe has picked for this week. Peri Peri is something which we actually love it is something which I would not have thought of cooking in the slow cooker. We are using chicken thighs which is something we never have. Instead we usually cook with the breast so I am looking forward to cooking with something different. We are actually going to be serving this with rice for something a little bit different.

Wednesday- Mexican Three Bean Taco Bowl, this is something which I decided to choose. This is a meal which does have no meat. As you may remember in January we had a couple of meals which did not feature any meat. I would love to have more of this. We also have some nachos which we need to use up so this will be served with this meal. For sure I think this is going to be one which I am looking forward to the most.  If this is a meal which we enjoy of course, I will be sharing this recipe with you.

Thursday- BBQ Pulled Gammon, you have heard of BBQ pulled pork. However, when I was looking through Pinterest I found this recipe. Gammon is a piece of meat which Joe loves so of course, this is something which we had to try. This is something which we are going to serve with either wedges or chips. I am hoping that this is going to be so tasty because it is a fraction of the price of making pulled pork and we love gammon more.

Friday- Donner Kebab, Fridays we love making fakeaway. Which is a fake takeaway so this week we have opted to make a donner kebab from a pinch of nom of course.This has a lot less calories than a donner kebab would and is not going to feel as greasy.  Making your own of course, is fun and also the fraction of the price a meal from the takeaway would cost you. So this is win win in our eyes.

Saturday- Meatballs and Pasta, we picked up some meatballs a few weeks ago reduced. I also made some and froze them. So I am thinking of getting them out of the freezer and then throwing them together with some pasta and a sauce. I know that this is a meal which Jess will eat without having to be asked twice. I may even throw the boat out and have a garlic bread with it as well. This is going to be a simple meal yet very effective.

Sunday- Pork Steaks In Mushroom Sauce. This is another slow cooker meal because we are in Derby at the Mama Meet Market. So we want something simple and effortless when we get in. I know that no doubt I will be tired because I will have done a lot of walking and talking. This is going to simple and I feel like I am going to serve it with some for of Potato however, I have not decided what yet.

Meal Plan 5th April #14

Another week has actually passed and I am unsure how. Time has been going to quickly I think we have finished the garden now which is amazing. We have been working so hard on it we wanted meals which wee quick to make. Along with the been enough to replace the calories which we had managed to burn off. I think we have a good mixture of food this week I hope you agree and enjoy seeing the meals which we have been consuming.

Monday- Veggie Pasta this something we decided that we wanted because we had a lot of veg which we needed to use up. It was one of the only days we knew we was going to be able to smash a lot of the garden we looked at the weather forecast so we went for it. This was a super simple meal however, this was so effective. We loved this an I am sure we will make it a few times in the future when we are busy.

Tuesday- Steak, Chips and Fried Egg this is something which we are having is because we bought steak. We managed to pick up one of the 16oz steaks from Aldi. These were a special buy which were super cheap which is why we purchased one. Steak is something easy which we have not had for a while. We are going to be serving these with chips and also fried eggs because this is something simple but so effective. For sure this is one which I am going looking forward to this.

Wednesday-  Smoked Haddock Curry, this is something which we have not had before. I have not had a fish curry in the past. I know my Mum has and said it was beautiful. We did actually have some smoked haddock in the freezer which means that it does not cost as much on the food shop. Curry is something we rarely have so I am looking forward to this. Of course, it is new meal for me to cook which is always a bonus as well. This will be served with nan bread and rice.

Thursday- Prawn and Chorizo Paella, this is something which we have made in the past. Paella is something which we all enjoy consuming and we actually have Jess for tea. This is due to the fact that we are going on an Easter Egg hunt. I am going to make this to scratch and hopefully this is going to be a recipe which we are going to share. Paella is something which I find hard to find a lovely ready meal it does not take that long to make at all. This is why we do make our own Paella dish. I would love to make it one day with more than just prawn and chorizo.

Friday- Fakeaway KFC Chicken Zinger Burger, this is a recipe which I have found from a Pinch Of Nom. I fancied a chicken burger however, this is something which I wanted to make myself.  As you know we are trying to make a choice to eat a lot healthier.This is going to be served again with chips I think. I have never tried a Chicken Zinger Burger from KFC so I can not compare this to the real mccoy. I am sure I am going to enjoy this because chicken burger with a kick is right up my street.

Saturday– I am actually out at work and will be home later so I think Joe and Jess are going to have a pasta meal. They will just throw something together and no doubt it will be amazing. I have decided that I am going to throw something simple like a pizza in the oven when I get home. I can have this if I am hungry there is no guarantee that I actually will be. All I want is something simple which I can throw in the oven. This is not something which we often do we do like to cook from scratch a lot.

Sunday- Hotdogs and Loaded Fries, the loaded fries is something which we saw on Pinterest. It sounded something a little bit different which we love. I know this is something which Joe would order if we was having a meal out. Due to this not been a complete meals we actually are going to have hotdogs as well. This is a meal which we have not had in a long time so I think this is going to be a great meal for a change. We will have had a busy day because we are at baby and bump expo on Sunday.

Meal Plan 29th March #13

Another Friday so that must mean that it is time to share with you the meals which we have been consuming this week.  I will warn you now that a lot of the meals we have been having are from a pinch of nom.  I purchased the cookbook when it came out due using a lot of their recipes anyway.  Trying to eat a bit healthier is something which Joe and I are trying to do. We have been feeling the benefits of having more energy.  This week he has been off work which means we have been spending time sorting out the garden and the house. Of course, I am going to be sharing our update very soon. So we have been wanting meals which we can do quickly and also that are going to fill us up. I hope you enjoy seeing what we have been eating and it gives you some inspiration for meals of your own.

Monday-  Salmon Fish Cakes and Wedges. I purchased some Salmon reduced a couple of weeks ago and thought this would be a great way to use it.  Fishcakes are something which I love in the summer to have with a salad. I think it may be something which I will do in the future. This week I will be serving it with wedges because it’s not that warm. I do not think I have ever made fishcakes from scratch but they are something which I am looking forward too.

Tuesday-  Campfire Stew. This is one which is from a pin of nom. A stew will actually fill us up which is what we are looking for this week.  It is something different from what we would normally make. We usually do not have a lot of Gammon in our lives so this will make a change.  I love the idea of putting it in the slow cooker and letting that do all the work. I may share the recipe if this is a very nice recipe which I am sure it is going to be.

Wednesday- Chicken Fajitas Pasta, this is something we have made in the past.  Chicken Fajitas is something which we love it is so amazing and of course, we love pasta. So this is a winning combination for us.  This is super simple to make and you do it in a couple of pans so there is not that much washing up. We did not have to purchase much for this meal which is a huge bonus. I know that I am going to share this recipe very soon because I am sure that it is one which a number of you would enjoy it.

Thursday- Cajun Dirty Rice. This is something which we saw in the book which thought we would adore.  Cajun is one of my actual favourite spices and rice is something which we do not have often. I am sure that this could be a little bit like the spicy rice from Nando’s. This is something which I order on the rare occasion of we go.  Joe helped to choose most of these meals this week. This is a fakeaway for us, I think this is the best way because we are trying to save money and only have one a month at the moment.

Friday- Nacho chicken and jacket potato. Again this is a meal which I have picked up reduced and froze. By the time Friday comes around, I can not be bothered to cook. This is going to be perfect because this is something which we have had in the past. I know I could actually make this myself and this is something which I may do in the future. This is going to be served with a jacket potato because we have a fair amount of them. I may have some mixed veg to go with this but I am unsure yet.

Saturday- Meat and Potato Pasties. This is another recipe which I found in the pinch of nom book. This is something which I am going to be putting in my slow cooker and then have one early in the afternoon. The reason we are having it early is that we are going to see Disney on Ice. I am looking forward to this meal because it is something which I would not have thought about making. Instead, usually, I would have just picked them up in our weekly shop. I think this is one which I am looking forward to so much.  You use torillas because of course these meals are actually low calories.

Sunday- Roast Beef Lunch, Of course, it is Mother’s Day which means we are kind of having an amazing meal. We are hosting my parents and we are having a beef roast dinner which I think Joe is going to be making. I think we are going to be having most of the trimmings and a ton of veg. I am sure we may even splash out and even have a pudding.

Meal Plan 22nd March #12

Another week which we have smashed which is amazing because this means that Joe is off for two weeks now. He is taking easter leave early instead of the school ones and it means that we are hopefully going to be able to smash the garden renovations. Fingers crossed that we get amazing weather to be able to do it as we have a fair few days work to do. I am hoping to share the transformation of the garden with you.   So this week has been all about quick food because I have been trying to put the hours.  Meaning I do not have to do as much work when Joe is actually off. I am aiming to do half days however, I am not sure how possible this is going to be.  Today I am going to share with you the meals which we have been consuming.  I hope you enjoy seeing what we have been having.

Monday- Sausage Casserole, this is something which we choose because we have some sausages in the freezer.  I thought I would make this into a casserole the weather has not been amazing and this does mean that I want some more hearty meals.  So I think that this casserole should be able to fill a hole and keep me warm. I have some potatoes which I am going to use and make some mash to go with the casserole. I hope this is going to be a nice meal because I have not had a casserole for a long time. This should be so simple because it is all done in the slow cooker.

Tuesday- Hunters Chicken and Wedges, this is something which I love to order when we go out for a meal. This has been something which I have said that I am going to make for a long time however, I have just not got around to doing this. I am even going to make my own BBQ I am interested to see how this one comes out. Hopefully, it does come out very nice because it does mean that I can eat in more than always having to eat out.  This is going to be one of the meals which I think I am going to enjoy the most this week. It does not look that hard to make which is always a bonus for me during the week. I love simple meals which I do not have to think about too much.

Wednesday- Shrimp Pad Thai, this is something which I have never made before. However,  Thai food is something which I love, to be honest, I love most of Asain Cusine.  I want to try and see if I can make this at home because the only place where I see Pad Thai is at restaurants. Where we live I do not think we can get pad thai delivered. Speaking to Joe this is one of the meals which he is looking forward to the most.  Maybe because is something different from what we normally have.   If this works I will be sharing this on one of the meal inspiration Mondays because I am sure this is something which a lot of us would love to make.

Thursday-  Chicken, Leek and Brie Pie, this is something which I have not made before. I rarely have pie but this is something which I have been fancying for a while. Hopefully, the warmer weather is going to come very soon which means that it is going to be too warm to have pie. This is one of the reasons why I am making it now before this does actually happen.  I did actually find the recipe on Pinterest for sure this is something which I would not have made.  For some reason I did not think that brie would I would have used cheddar but for sure I am looking forward to this. According to Joe, this is not one which he is looking forward to as much as other meals.

Friday- Mexican Burrito Bowl. This is a meal which we were meant to have a couple of weeks ago and I think last week. However, this is one which we have not got around to doing this.  The ingredients are all still in date which means that we can still make this.  It is a bonus because it does mean that we do not have to pick up anything else.  Mexican food is something we both love and this sounds like it could be such a tasty meal. Again I will be sharing the recipe if I think it is worth it. Burritos are amazing but are something which we do not consume a lot at home because of how hard they can be to make.

Saturday- Cheese Burger Meatballs and Pasta this again is something which I found on Pinterest. This is something which made me so curious because of the fact that it sounds so different. I have had meatballs and pasta before but I do not think I have really ever had cheesy meatballs.  Of course, this is something which Jess is going to adore. Give her anything which is pasta based and this is something which she is going to love. If she really behaves her self she may actually be able to have some garlic bread which again is something which she is back love.  This again is another Pinterest meal. I see to be getting more and more off there now.

Sunday- Chicken Korma Curry having a curry is something which we have not done with Jess for a long time. We have chosen to have a Korma even though I know she is able to handle some more spicy curries.  We are going to make this in the slow cooker because this does mean that I do get a break from the cooking. I am unsure what we are planning on Sunday yet so having it in the slow cooker is amazing.  Hopefully, this is something which Jess is going to finish a whole plate of. I am going to serve this with rice and also nan bread as well.

There is a range of meal this week some of them so simple for us to cook.  The slow cooker is going to be used for the first time in a long time. I have actually linked up with Katy Kicker meal plan because this is where I get some of my meal inspiration from so I have a wide range of different meals.

Meal Plan 15th March #11

Today I am sharing with you the meal plan for this week. There is a lot of meals which I have been featured before. I  have four nights this week where I am having to eat alone. Joe is away and Jess eats at nursery. Which means I get to select meals which I have already prepared in the freezer.  A bonus of him away does mean that I am going to have some more of that elusive freezer space.  Saying that I do keep purchasing reduced stickered items for a time when he is away.  I hope you enjoy reading about what kind of food I have been eating this week.

Monday- Chicken Goujons, Wedges and Spaggethi Hoops, something so simple but effective.  I actually made the chicken goujons way back sometime last year and made too many so froze them. I thought this week would be great to dig them out and consume.  We have no chips in so wedges are going to be served.  I think I prefer wedges anyway.

Tuesday- Beef Casserole and Mash this is something which I have frozen as well. I only had enough for one person.  The weather is meant to be pretty rubbish this week so I think this is going to be appreciated.  I have some potatoes in which I am going to turn into Mash Potatoes and serve. Something warm and comforting for tonight.

Wednesday- Lasagna and Salad maybe Garlic Bread. To be honest, could I have a week where I do not consume pasta I do not think I could. There are so many little tubs of lasagna in my freezer that I need to get some removed.  So I decided that I was going to have this for a meal this week.  I have some salad because I am trying to be a good girl and eat a bit better again at the moment.

Thursday- Mediterranean Fish and Wedges. There is actually one left in the packet which means that it makes sense for me to finish them off. I would actually purchase this again I know it is a birds eye one but it can be expensive if you do not purchase them on offer. I reckon I will end up serving this meal with mixed veg so that there is some greens in the meal.

Friday- Fish Pie, this is a recipe which I found on Pinterest I was looking for a fish dish. We have some to use up and I came across a fish pie now this is something which we have not had in the longest time. I think this is going to be something which we just have on it’s own hopefully it is going to be very filling. If this is something which I enjoy I will end up sharing the recipe with you on Monday.

Saturday- Pasta Bake, I have some creme fresh which I need to use up from a previous week. Of course, this meant I just went to pinterest to see what I could make with it. Then I did find a pasta and spinach pasta bake this is something that I would not have thought about before. I am looking forward to this because it is something different. Spinach is something which I am unsure if Jess would eat but because it is with pasta she should eat this. I will maybe serve this with garlic bread because we have a spare one in the fridge so I may use this.

Sunday- Sweet Chilli Prawns and Noddles. Noodles are something which I could consume very often. We had some prawns in which I fancied using up this does sound like something a little bit different to what I would normally make. I do not think I have every heated up sweet chilli sauce and I am sure this is something which I have to do for this meal. Hopefully, this is going to be a meal which Jess is going to end up eating. I may have to purchase something in case she does not like it at all.
