Meal Plan 22nd March #12

Another week which we have smashed which is amazing because this means that Joe is off for two weeks now. He is taking easter leave early instead of the school ones and it means that we are hopefully going to be able to smash the garden renovations. Fingers crossed that we get amazing weather to be able to do it as we have a fair few days work to do. I am hoping to share the transformation of the garden with you.   So this week has been all about quick food because I have been trying to put the hours.  Meaning I do not have to do as much work when Joe is actually off. I am aiming to do half days however, I am not sure how possible this is going to be.  Today I am going to share with you the meals which we have been consuming.  I hope you enjoy seeing what we have been having.

Monday- Sausage Casserole, this is something which we choose because we have some sausages in the freezer.  I thought I would make this into a casserole the weather has not been amazing and this does mean that I want some more hearty meals.  So I think that this casserole should be able to fill a hole and keep me warm. I have some potatoes which I am going to use and make some mash to go with the casserole. I hope this is going to be a nice meal because I have not had a casserole for a long time. This should be so simple because it is all done in the slow cooker.

Tuesday- Hunters Chicken and Wedges, this is something which I love to order when we go out for a meal. This has been something which I have said that I am going to make for a long time however, I have just not got around to doing this. I am even going to make my own BBQ I am interested to see how this one comes out. Hopefully, it does come out very nice because it does mean that I can eat in more than always having to eat out.  This is going to be one of the meals which I think I am going to enjoy the most this week. It does not look that hard to make which is always a bonus for me during the week. I love simple meals which I do not have to think about too much.

Wednesday- Shrimp Pad Thai, this is something which I have never made before. However,  Thai food is something which I love, to be honest, I love most of Asain Cusine.  I want to try and see if I can make this at home because the only place where I see Pad Thai is at restaurants. Where we live I do not think we can get pad thai delivered. Speaking to Joe this is one of the meals which he is looking forward to the most.  Maybe because is something different from what we normally have.   If this works I will be sharing this on one of the meal inspiration Mondays because I am sure this is something which a lot of us would love to make.

Thursday-  Chicken, Leek and Brie Pie, this is something which I have not made before. I rarely have pie but this is something which I have been fancying for a while. Hopefully, the warmer weather is going to come very soon which means that it is going to be too warm to have pie. This is one of the reasons why I am making it now before this does actually happen.  I did actually find the recipe on Pinterest for sure this is something which I would not have made.  For some reason I did not think that brie would I would have used cheddar but for sure I am looking forward to this. According to Joe, this is not one which he is looking forward to as much as other meals.

Friday- Mexican Burrito Bowl. This is a meal which we were meant to have a couple of weeks ago and I think last week. However, this is one which we have not got around to doing this.  The ingredients are all still in date which means that we can still make this.  It is a bonus because it does mean that we do not have to pick up anything else.  Mexican food is something we both love and this sounds like it could be such a tasty meal. Again I will be sharing the recipe if I think it is worth it. Burritos are amazing but are something which we do not consume a lot at home because of how hard they can be to make.

Saturday- Cheese Burger Meatballs and Pasta this again is something which I found on Pinterest. This is something which made me so curious because of the fact that it sounds so different. I have had meatballs and pasta before but I do not think I have really ever had cheesy meatballs.  Of course, this is something which Jess is going to adore. Give her anything which is pasta based and this is something which she is going to love. If she really behaves her self she may actually be able to have some garlic bread which again is something which she is back love.  This again is another Pinterest meal. I see to be getting more and more off there now.

Sunday- Chicken Korma Curry having a curry is something which we have not done with Jess for a long time. We have chosen to have a Korma even though I know she is able to handle some more spicy curries.  We are going to make this in the slow cooker because this does mean that I do get a break from the cooking. I am unsure what we are planning on Sunday yet so having it in the slow cooker is amazing.  Hopefully, this is something which Jess is going to finish a whole plate of. I am going to serve this with rice and also nan bread as well.

There is a range of meal this week some of them so simple for us to cook.  The slow cooker is going to be used for the first time in a long time. I have actually linked up with Katy Kicker meal plan because this is where I get some of my meal inspiration from so I have a wide range of different meals.

Meal Plan 15th March #11

Today I am sharing with you the meal plan for this week. There is a lot of meals which I have been featured before. I  have four nights this week where I am having to eat alone. Joe is away and Jess eats at nursery. Which means I get to select meals which I have already prepared in the freezer.  A bonus of him away does mean that I am going to have some more of that elusive freezer space.  Saying that I do keep purchasing reduced stickered items for a time when he is away.  I hope you enjoy reading about what kind of food I have been eating this week.

Monday- Chicken Goujons, Wedges and Spaggethi Hoops, something so simple but effective.  I actually made the chicken goujons way back sometime last year and made too many so froze them. I thought this week would be great to dig them out and consume.  We have no chips in so wedges are going to be served.  I think I prefer wedges anyway.

Tuesday- Beef Casserole and Mash this is something which I have frozen as well. I only had enough for one person.  The weather is meant to be pretty rubbish this week so I think this is going to be appreciated.  I have some potatoes in which I am going to turn into Mash Potatoes and serve. Something warm and comforting for tonight.

Wednesday- Lasagna and Salad maybe Garlic Bread. To be honest, could I have a week where I do not consume pasta I do not think I could. There are so many little tubs of lasagna in my freezer that I need to get some removed.  So I decided that I was going to have this for a meal this week.  I have some salad because I am trying to be a good girl and eat a bit better again at the moment.

Thursday- Mediterranean Fish and Wedges. There is actually one left in the packet which means that it makes sense for me to finish them off. I would actually purchase this again I know it is a birds eye one but it can be expensive if you do not purchase them on offer. I reckon I will end up serving this meal with mixed veg so that there is some greens in the meal.

Friday- Fish Pie, this is a recipe which I found on Pinterest I was looking for a fish dish. We have some to use up and I came across a fish pie now this is something which we have not had in the longest time. I think this is going to be something which we just have on it’s own hopefully it is going to be very filling. If this is something which I enjoy I will end up sharing the recipe with you on Monday.

Saturday- Pasta Bake, I have some creme fresh which I need to use up from a previous week. Of course, this meant I just went to pinterest to see what I could make with it. Then I did find a pasta and spinach pasta bake this is something that I would not have thought about before. I am looking forward to this because it is something different. Spinach is something which I am unsure if Jess would eat but because it is with pasta she should eat this. I will maybe serve this with garlic bread because we have a spare one in the fridge so I may use this.

Sunday- Sweet Chilli Prawns and Noddles. Noodles are something which I could consume very often. We had some prawns in which I fancied using up this does sound like something a little bit different to what I would normally make. I do not think I have every heated up sweet chilli sauce and I am sure this is something which I have to do for this meal. Hopefully, this is going to be a meal which Jess is going to end up eating. I may have to purchase something in case she does not like it at all.

Meal Plan 8th March #10

This week I feel like our meal plan is going to be a bit different to most other weeks. We have a couple of meals out and we are using some meals which we had in. We have still managed to do a wide range of meals which is always a bonus.  So I am going to share the meals which we are going to consume this week. I can not wait to consume some of these.

Monday– Mixed Grill and Wedges, this something which we have purchased already.  We got it when we visited the Tong Garden Centre, a mixed grill is something which Joe loves so we thought we would have one for this change. We are going to share the mixed grill and serve it with wedges instead of chips because we already have some in. This is going to be a meal which is simple but easy to make.

Tuesday– Chicken Stir Fry, this is a meal which Joe has been saying he fancies for a while. So it is something we are going to get around to making. Again when we visited the garden centre they had some good offers on the meat so we picked a kit up. This means that it is already seasoned and full of sauce. I seem to remember that it a Thai style which is always good to try something different.  Of course, it is pancake day as well so we will be having some pancakes maybe before tea so we can have them with Jess which is going to be a bonus.

Wednesday– Meatballs and Pasta. Shockingly I am not making my own meatballs as I have done in the past. This time we have actually purchased some to try they come in an Italian sauce which means we do not even have to do this.  I am either going to put this with some spaghetti or some pasta depending on which we actually fancy.  This for sure is one which I am looking forward to as well because meatballs are not something we have often.

Thursday – Chicken Curry, we actually got some curry pastes for Christmas. So I am going to attempt to make one of them I think I may try the Bali or the Thai first. I will let you know how it comes out, I do not know if I have high hopes for this. We are going to have this simple with rice and some Nan bread as well.  This again should be simple and full of flavour I am hoping so.

Friday– We are actually eating out with my parents on Friday. I am unsure where we are going to end up no doubt a local pub close to them before the rugby. It will be nice to go out for a meal with them as I don’t think we since we have moved. We do not have Jess either as she is at her other grandparents for the week.

Saturday– Mexican Burrito Rice Bowl this is another meal which Joe has chosen. Mexican as I have said previously is a type of food which I love. He was searching my Pinterest for inspiration when he came across this dish. To me, it sounds like it could be very nice and it is something different for this week. I am looking forward to it because it is something different to what we would normally choose. If it is nice I think I am going to share the recipe on my blog as well in a meal inspiration Monday post.

Sunday– this is likely to be a takeaway or sandwiches something quick. We actually may eat at a party which we are attending however, this does not finish till 7pm so when we get home is going to be closer to 9.  It does depend on how hungry we are to what we are going to eat that evening.  It is likely that Jess will end up been treated to another McDonald’s on the way back so we know she has been fed.

Meal Plan 1st March- #9

So it is the start of a new month how quick did February go. I can not believe that it is now March.  Today I am going to be sharing with your our meal plan for this week there has been some different meals this week. Again we have been trying to use some things up which we had rather than always buying it in.  This was another week where we only just managed to spend enough to do this click and collect due to doing this again this week.

Monday – Chicken Fajitas, this something which we love to consume in this house. We did actually have a kit in with all of the spices which you need, I love to add peppers and onions into the mix with the chicken. We tend to only get the spicy one because we are both fans of the heat which is something which I am glad about.  Sour cream,  guacamole and salsa will also be on the table so we can use it and make the fajitas saucy. I think Mexican food is one of my favourites I could eat Fajitas every week if you let me.

Tuesday- Fish,  Chips and Mushy Peas, this is something which we fancied when meal planning. We have chosen to get some fish in and cook it at home the same for the mushy peas. I think we are going to treat ourselves and pop to the chip shop for the chips.  This is like having a fakeaway chip shop. After all, you have to treat yourselves sometimes and we are saving money not getting an actual takeaway.

Wednesday- Vietnamese Pho, this dish is something different for us.  We actually saw a kit when we were in one of the supermarkets it is not something which we usually would have picked up. However, we are enjoying trying a lot of new food recently and this does sound like something we will enjoy as it is soup with a huge twist. I will report back how this is I think it may be one of the meals which I am looking forward to the most this week.

Thursday- BBQ Chicken, Wedges and Mixed Veg. This is a meal which we are having as it is going to be pretty easy as it basically all goes in the oven. Jess has her injections on Thursday so in case she is not feeling 100% we want something easy.  She may be eating with us or I may treat her to a McDonald’s depending on her behaviour. I have a Lexi Roots Marinade which I am going to use to make the chicken BBQ, I am looking forward to seeing how this comes out. Hopefully, it will be full of flavour.

Friday- Mexican Fried Rice, this may sound like a random meal and more of a starter. I think I am just going to make more of it in order to make it a meal. Again Mexican food is something which I adore I saw this recipe over on Pinterest and I thought I would give it a try. To be honest I had all of the ingredients in as well for this meal which is always a bonus.

Saturday- Spagetthi Bol, this is something which Joe loves to cook. I am making the most of having him at home and he will make this meal. I am unsure what he actually does but whatever it is so full of flavour.  Garlic bread may be served with this meal and is goes so well. Jess is likely to consume so much of this meal. It is also something very simple to do should we have a busy Saturday doing this like we usually end up doing.

Sunday- Pizza, we are making these ourselves using the base from Home Bargains. We have some peppers some onions, sweetcorn and pepperoni which we are going to use as the toppings. This is a tea which Jess can get involved in which is always a bonus as there is not that many that she can do this with.  We are going on a day out which means we will be home later but at least this is something quick which we will be able to make.

There is a range of meal this week some of them so simple for us to cook.  It goes to show you do not have to have anything fancy all of the time.  Sometimes the simple meals are the best.

Meal Plan 15th February #7

Another week has passed which means that it is time to share another weeks meal plan. This one of course has Valentine’s Day included so it does have a few special meals in. This week we did go slightly over the budget which I like to spend on food however, we do have some meals for next week planned. Of course, Joe is still home which mean the meal plan is for a couple of people. I hope you manage to get some inspiration from this meal plan.

Monday- Gammon, Egg and Chips. We actually has purchased the Gammon last week as part of an offer. We also had another piece of gammon in the freezer which we thought would be good to use up because then we can have some more space. Eggs are something which we always have in and I think I am going to make some homemade chips with potatoes which we already have in.

Tuesday- Smoked Haddock, Potatoes and Mixed Veg, I was actually unwell on Friday which meant this was a meal which we had not consumed. So we do want to get this consumed before it goes out of date. We have a ton of potatoes which we can use with this meal and also some mixed veg will be served with it. This should be a nice clean meal which is something I am trying to do more and more.

Wednesday- Pork Schnitzel, Potatoes and Mixed Veg, this is a meal which Joe decided he fancied after he saw it in another cook book. This is not something I have had for a long time so this is going to be a change. It is at least a few years since I had it. I know we are going to be having potatoes and mixed veg again but this is something which we like so will both enjoy.

Thursday- Valentine’s Meal Deal, Sirloin Steak, Jacket Potatoes. We are having a three course meal deal which we purchased from Asda. We are having prawns, sirloin steak with jacket potatoes and garlic mushrooms. Of course , we have cheesecake for desert. This is something which we may end up having another evening. This all came with a bottle of wine which I will end up having another day. It is a school night after all.

Friday- Cajun Chicken, Potatoes and Mixed Veg.We have a some Cajun spices in which could do with been used up. We have had it a while and I thought a good way to use this in a meal was to rub into the chicken. This should give it a very nice flavour which is key.. Then I am going to serve this with potatoes and mixed veg which seems to be the staple of this meal plan this week.

Saturday- Beef Stronganoff and Rice, this is another meal which we have not had for a long time. I do not think I have actually ever made this meal which is going to be a challenge for me. I do like picking up new meals. This is going to be served with rice in order to make sure that some of the sauce is absorbed. This is a meal which Jess has never tried so I am hoping it is one which she loves to consume.

Sunday- Lasagna and Garlic Bread, this is a meal which I really fancy. We have not had for a couple of weeks and I fancy it. It is proper comfort food for me and I am still loving that. I know that Jess is going to eat this because she has in the past. I actually have everything I have in for this meal which is always a bonus. All I need to do is get is the garlic bread towards the end of the week. I am looking forward to this a lot.

Meal Plan 8th February #6

It’s time to do another weekly meal plan these seem to be coming around fast at the moment. This is the first one which I have done in a few weeks which has been for more than just me. Joe is now home which makes meal planning a lot easier as we can bounce ideas off each other. It also means that I do not have to do all of the cooking it now can be shared again which is a huge bonus for me. So I am going to be sharing the meals which we are going to be eating this week. There is a random selection.

Monday- Smoked Haddock Fish Cakes, Sweet Potato Wedges and Mixed Veg. We have chosen this as I was sent a few lovely products by the saucy fish co to feature on my valentine’s gift guide. The fish cakes were included so we thought we would team them with some sweet potato which we had in and some mixed vegetables. We have had to purchase some tins of mixed veg because the freezer is still so full.

Tuesday- Thai Sweet Chilli Chicken Stir Fry. This is a kit which we have had in the cupboard since around Christmas when we picked it up cheap. So I have decided to make some more cupboard space to use it. All I need to do was get some chicken and some baby corn. It should be a meal packed with flavour. Both Joe and I love sweet chilli so this for sure is a meal I am looking forward to.

Wednesday- Tomato and Chilli Salmon and Rice. Again the salmon was kindly gifted by the saucy fish company because this sounds like it is going to be full of flavour. I did not want to take away from the salmon so we have decided that we are going to play it simple and go with just some rice. This should be a meal which is going simple but so filling.

Thursday- Chicken and Chilli Burgers and Chips. This is something which we actually found in one of the recipe books which we have and fancied. Chicken burgers are usually something which I would order if I was having a burger. Everyone knows that I love Chilli so this should be a perfect combo for me. We are going to make some home made chips to be served with this meal.

Friday- Smoked Haddock, New Potatoes and Mixed Veg. Yes I know this week is very fish heavy but this is due to having no room in the freezer. This is part of the saucy fish company box I was very lucky to receive this sounds so simple but effective. We have some new potatoes which are herby I think. We wanted to keep the meal healthy and this is why we have paired the mixed veg with this.

Saturday- Pepperoni Bake, again this is one which Joe picked out from a book which we own. This is a meal which I know Jess will eat because it combines two of her favourite things pasta and pepperoni. I am looking forward to this as it is something which I would not have thought about making. I think we may serve this with some garlic bread as well depending on if we have any in at the time.

Sunday- Mini Toad In the Hole, Mash and Veg. This is a meal which I have been making for a few weeks but as a result of been poorly for the last few I have not got around to it. For sure I am looking forward to this as it is something different. I think it is going to be a meal which Jess is going to completely eat which is amazing. At it is warm and hearty just what you need when it is still very cold outside.

Meal Plan 1st February #5

I can not believe that another week is over and it means that it is time to share the meals which I have been consuming this week. I have actually been poorly. This means I have not been eating some of the ones which I planned. So some of the meals are going to be repeated. So I am going to get on with sharing the meals which I plan on eating this week.

Monday- Bacon and Leek Pasta, this is one which I made too much of last night. I have decided that I am going to have this meal again. It saves me freezing it because I am still tight for freezer space. It is a meal which was so simple but I actually loved it. I might make it again in the future.

Tuesday- Mexican Beef Wraps, Beef tacos are something which I made a few weeks ago now. I actually had some left over which I decided to freeze easy meals are amazing when you are solo parenting. I have some wraps in and I think I am going to throw in some cheese with these. This is going to be super simple but no doubt packed with flavour.

Wednesday- Broccoli Pasta Bake, this is one I planned a few weeks ago but have been ill. I still have the broccoli which is in great condition. This for sure is going to be a meal which I am going to be able to freeze. The recipe serves around 4 so there is going to be plenty of left overs. I know due to it been a heavy broccoli meal this is not something which Joe would enjoy. I think this may be a meal which garlic bread because I have some in which actually needs using up.

Thursday- Sloppy Pasta- yes I am going to have pasta two meals in a row. I love pasta and this is a meal which I did not end up making last week. This is a meal which I have been thinking about so I took this as a sign of having to make it. It does not look like I need to purchase a lot of food for this either. This is ideal because of the fact it is getting close to the end of the month when money can be a little more tight.

Friday- Smoked Haddock and Chopped Tomatoes with Warm Bread. This is a meal which I am actually having at my parent’s house. I am staying over there due to the fact that I am heading to Manchester on Saturday with my Mum. This does not sound like a lot of food but it will be a large piece of smoked haddock. Part baked bread is something which I love to add butter with this it just makes it even more special. Of course, it is going to be really nice to be consuming a meal without it been alone as well.

Saturday- Out, as I mentioned on Saturday my mum and I are heading to Manchester. So this means that we are going to be heading out for a meal of course, there are plenty of amazing restaurants which we could dine in. I think this will be more of a something which we decide just before we actually want the food because I usually find this is the best way.

Sunday- Takeaway Pizza, I know it is a really bad end to the week and I have not hit the gym for a while. However, I do not get home till around 6pm and it is looking likely that Joe will be home. So as a treat for managing to survive another period of been solo it looks like we are going to have a takeaway. We will end up ordering from a local one which is cheaper than Dominos and to be honest it will end up doing me lunch as well on Monday.

I can not believe that it is February already before we know it we will actually be having salads. Instead of the warm comforting food which we require at the moment due to the fact the weather is bitter out there. I am looking forward to been able to cook for two people next week. I find it a lot easier than just for one.

Meal Plan 25th January #4

Today I am back with another meal plan this is something which I have been loving. Since meal planning we have found that we are saving money because we are not buying things which we are not going to use. I have also found it so useful because it keeps me eating actual meals when Joe is away. Only 2-3 weeks left of solo parenting. I am going to be sharing with you the meals which I am going to be consuming this week.

Monday- Leftover Pizza, last night my parents came over and we had a takeaway pizza. We ordered a little bit too much so there is going to be enough for me to be able to eat this as my tea. There should be enough to feed me and if not I have enough to make sandwiches if I need to be able to. This means that food is not going to go to waste which is huge for me.

Tuesday- Bacon and Leek Pasta, I still had some of the leek and bacon left over from last week. I decided that I was going to make something so simple a leek and bacon pasta was perfect. It is a simple meal to make and it can be done quickly. I sometimes need quick meals after nursery runs because otherwise I can be eating way too late. This was so cheap for me to make because all I needed to purchase was soft cheese. I seem to remember that this recipe I am using serves two so this will also do me a lunch in the week as well.

Wednesday – Chicken and Chorizo Paella, this is something which we have had in the freezer for a little while. I am going to use this up because of the fact, I still need freezer space. This is a meal which I know I am going to enjoy because it is packed with flavour. Chicken and Chorizo are two of my favourite meat flavours together. This is going to be a simple yet very effective meal.

Thursday- Veggie Quesadillas as you may know I am looking to have at least two meals a week which are veggie. This is a meal which I found on pinterest this is one of my favourite cuisines Mexican food. Quesadillas are something which I would be likely to order if I was out in a restaurant. Again this meal managed to not to break the bank as all I needed to purchase was wraps and some mixed beans. Hopefully this is something which I love because it looks like it is such an simple meal to make. I know it is something which Joe will adore as well.

Friday- Pesto Chicken ,Mash and Veg, the chicken is something which I already have in my freezer. I am still trying to make room for food in the freezer for other food which I plan on making. I am going to serve this with mash and veg because I still have some potatoes leftover. This is a semi healthy meal which is something I am trying to do this year.

Saturday- Meal Out– this is another meal which we are eating out. We are going out to see my brother so this means that we are going to be eating out. I am unsure where we are going to be eating. It is nice to eat out because it makes a change from having to cook. This can become a huge chore while you are solo parenting.

Sunday- Sloppy Pasta, this is a meal which I am making for a couple of reasons. I have have some tomatoes which really need to be used up and of course this is an perfect way to do this. Pasta is a meal as you may have read previously it is one of Jess’ favourite meals. I know this will end up getting eaten and if there is leftovers I can always have it for lunch.

This week I think due to he fact that I had the majority of the items in which I needed. The weekly shop cost me less than a £10 and this did include some cleaning products so as you can see it was a very cheap week.

Meal Plan 18th January #3

Today I am back with another weekly meal plan this is something I am enjoying. I have had a few people in my personal life ask me how the meal plan is going. This week it a bit different because it is just for one person as Jess eats at nursery. This weekend she has a party as well and we may have a day out with a meal out. Without further ado I am going to share with you the meals which I am going to be having this week.

Monday- Tomato Soup this is a meal which I have taken out of the freezer this is a meal I made last time Joe was away. It going to be a case of taking it out of the freezer and saving with bread. This was such an easy meal to make and freezer great for busy days. It also saved food going off which is a huge thing for me. I hate wasting food.

Tuesday- Bacon and Leek Risotto, this is another meal which I am making so that food does not get wasted. We had some leeks left over from when we make the chilli. I am going to use them to make this meal is something different risotto is not something I have had for a while. Again I found this recipe on Pinterest it is such a useful tool.

Wednesday- Fish, Jacket Potato and Veg, when looking in the freezer I realised I had some seasoned fish. I thought I would give myself a night of simple tea even though this a tasty meal. It should not be that hard as it is just putting food in the oven. I am looking forward to this meal as I have not had fish in a while and it is something I enjoy.

Thursday- Meatballs and Spaghetti, this is a complete use up meal. I have some mozzarella to use and also some pasta sauce. I thought this meal would be a good way to combine the two. It is going to be a challenge making meatballs for this first time. This is a dish which I am likely to order in a restaurant so I thought why not treat myself and make it at home.

Friday- Lamb Passanda Burger,  this is another meal which I have already prepared and is in the freezer. Friday nights at the moment I want something quick after a hard week working and at the gym. This will be served with chips which may be frozen or homemade depending on how many potatoes we have left. This is a twist on a normal burger and one I loved when I have made it in the past.

Saturday- Broccoli Pasta Bake, I have some broccoli from another recipe I made which needs using up. So I turned to pinterest to see what I could make this sounded really tasty. I know it is a Saturday and that means I usually have to feed Jess. However, she is at a party so there is a huge chance that she will just want something small.

Sunday- Mini Toad in the hole, there is a chance that we are going out for the day and will not need food. However, if this is not the case I plan on making mini toad in the hole with sweet potato mash. To me this is a really comforting meal and on a Sunday usually that is what I fancy going to make it. I have everything I need in in case I do actually make it and of course this is going to be served with gravy.

Meal Plan 11th January #2

Today I am back with another meal plan of what we have been having this week. This week is the last which I am doing for two people as Joe is going away with work. for a month. Don’t worry I will be sharing my meal plans as they keep me more organised. This week we have been using a lot of meat which we had already in the freezer. So here are the meals which we are having.

Monday- Veggie Pizza, we have have some mushrooms which really need using up. Combined with the fact that we have some grated cheese, peppers and onions. This means that they are not going to go to waste which is a huge bonus. We purchase two large pizza bases which I think are 10″ for £1.10 in Home Bargains. This is a fraction of the price they are in Asda I think we save around 70p each time. We also had the pizza sauce in the cupboard so this was a very cheap meal for us.

Tuesday- BBQ Cajun Pork Steaks, Jacket Potato and Veg. This is a recipe which I found on Pinterest if you do not follow me I share a lot of recipes over there. I had picked up some pork steaks when they had been reduced in Tesco. I plan on taking these out of the freezer covering them in BBQ and cajun powder. This sounds a simple but really tasty meal to bulk it out I going to add some Jacket Potatoes which we have in. Of course, I need my veg and I am going to stick some on the side.

Wednesday- Beef Tacos, again this is a meal we are having because the beef from new years day is out of date today. We only cooked half and saved the rest but we have no room to freeze it. Instead of having another roast I decided to see what I could find on Pinterest. I found one using the slow cooker meaning I barely have to do anything. I even had all the spices which I needed in at home . If this is nice it is going to be a meal which I can make over and over again.

Thursday- Veg Curry, as you may remember I am trying to do a couple of veggie meals a week. This week we have decided that we are going to try a veg curry, curry something which I adore. I think that this is a meal which I have never had without meat. I can only assume if you do not end up using meat it can only veg. We are going to have this with rice and I presume it is going to be a pretty filling meal all of our veggie meals have been in the past.

Friday- Garlic Kiev, Jacket Potato and Spagetthi Hoops . This is a meal which I have had from hello fresh before. I like it because you can add as much garlic as you want. I usually find that the shop bought ones can usually be a bit dry which is horrible. By using a recipe and making my own I do not have this problem. I am going to serve this jacket potato because I love them so much. I have added some spaghetti hoops to this meal as well as we had some in and I have not had them in the longest time

Saturday- Lasagne and Garlic Bread. This is a meal which I have already cooked and have in the freezer ready to take out. I have done this so that we have something quick and easy when we get back from a day out. I purchased a garlic bread which we are going to share. The lasagne was made it using a recipe which I found online which I am going to share with you one Monday. This is a meal which Jess is will eat it all because she is obsessed with pasta.

Sunday- Chicken Chorizo and Red Pepper Pasta Bake. Again with it been a Sunday it means that Jess is going to be home for food and something she loves is pasta. I had some Chorizo left over from something which I made a couple of weeks ago so I thought why not stick it all together and make a pasta bake. I know this means that we are going to be having pasta two nights in a row but it is completely a different kind of pasta. This meal only cost me the soft cheese because I had everything else it.

Overall this week with shopping it has been a pretty easy week. We have used a lot which has been in which is one of the reasons the shopping came to under £20.
